Spicy Chicken & Bacon Stir Fry

Can be made into a freezer meal
- 1 1/2 pounds boneless skinless chicken thighs, cut into 1/2-inch pieces
- 1 large egg white
- 1 tablespoon arrowroot or cornstarch
- 1/2 pound bacon, cut into 1-inch pieces
- 1-inch fresh ginger, cut into tiny matchsticks
- 2 bell peppers, any color, stemmed and cut into 1-inch pieces
- 1 bunch of green onions, trimmed and cut into 1-inch pieces
- 1 tablespoon chili paste, we use Sambal Oelek
- 2 tablespoons brown sugar
- 1/2 cup soy sauce
Cheesy Hash Browns

Heat oven to 350 degrees F
- Hash Browns:
- 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
- 1 (10.75 ounce) can cream of chicken soup
- 2 cups Crystal Farms® Shredded Cheddar Cheese
- 3/4 cup sour cream
- 1/4 cup chopped onion
- 1/4 cup butter or margarine, melted
- Topping:
- 1 1/2 cups corn flakes, coarsely crushed
- 2 tablespoons butter or margarine, melted
Lemon Raspberry Bread

1.Preheat oven to 350. 2.In large bowl mix together your butter and sugar and stir until incorporated
- Glaze:
- 1/2 cup butter, melted
- 1 cup sugar
- 2 eggs
- Juice and zest of 1 lemon
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup milk
- 1 cup raspberries
- 1 cup powdered sugar
- 3-4 Tbs lemon juice
