Applesauce Bars

Preheat the oven to 350 degrees F (175 degrees C)
- 1/4 cup butter or margarine, softened
- 2/3 cup brown sugar
- 1 egg
- 1 cup applesauce
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 1/2 cups confectioners' sugar
- 3 tablespoons margarine, melted
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Red Velvet Earthquake Cake

Preheat oven to 350 degrees; grease a 9x13" pan
- 1 box Red Velvet Cake Mix (plus the ingredients needed to prepare the cake)
- 1/2 C butter
- 8 ounces cream cheese, room temperature
- 1 tsp. vanilla
- 2 C powdered sugar
- 1 C semi-sweet chocolate chips
- 1 1/2 C coconut

- 1 1/2 cups Original Bisquick™ mix
- 1/2 cup granulated sugar
- 1/2 cup milk or water
- 2 tablespoons shortening
- 1 teaspoon vanilla
- 1 egg
- 1/2 cup flaked coconut
- 1/3 cup packed brown sugar
- 1/4 cup chopped nuts
- 3 tablespoons butter or margarine, softened

Peppermint Bark Cheesecake

To make peppermint bark: Melt 4 oz
- For peppermint bark:
- 4 oz. high quality white chocolate, broken into pieces
- 4 oz. high quality semi-sweet chocolate, broken into pieces
- 1 teaspoon vegetable, coconut, or canola oil-divided
- 1/4 teaspoon peppermint extract, divided
- 1/3 cup candy cane-crushed
- For Oreo crust:
- 24 Oreo cookies(with the filling)-finely crushed
- 5 tablespoons unsalted butter-melted
- For cheesecake filling:
- 4 - 8 oz cream cheese-softened
- 1 1/4 cups sugar
- 3/4 cup sour cream
- 3 tablespoons flour
- 1/4 teaspoon salt
- 2 teaspoon vanilla extract
- 2 tsp peppermint extract
- 3 eggs
- peppermint bark –chopped into small pieces
- For white chocolate ganache:
- 5.5 oz. high quality white chocolate-finely chopped
- 1/2 cup heavy cream
- For garnish:
- 3/4 cup whipped cream
- Crushed candy cane or hard peppermint candies

- 3 cups fresh corn kernels (about 6 ears)
- 1 medium-size orange bell pepper, chopped
- 1/4 teaspoon ground cumin
