In a bowl, combine flour, 3/4 cup sugar, baking powder, salt, cinnamon, and nutmeg
- 1 Cup All-purpose flour
- 1 1/2 Cups Sugar, divided
- 1 Teaspoon Baking powder
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Ground cinnamon
- 1/4 Teaspoon Nutmeg
- 2 Eggs, beaten
- 2 Tablespoons Milk
- 2 Tablespoons Vegetable oil
- 2 Cups Fresh or frozen blackberries
- 2 Cups Fresh or frozen blueberries
- 3/4 Cup Water
- 1 Teaspoon Grated orange peel

- 2 1/4 tablespoons vegetable oil
- 1/4 cup chopped onion
- 7/8 cup Miracle Whip
- 1/3 cup sugar
- 2/3 carrots

Sardine Empanadas

Remove the puff pastry from the freezer and let it thaw on your countertop
- 1 pound frozen puff pastry
- 2 tablespoons vegetable oil
- 1/2 cup white onion chopped
- 2 cups (8 ounces) white button mushrooms cleaned and diced
- 1/2 teaspoon kosher or coarse sea salt
- 1/4 teaspoon ground black pepper
- 1 cup (about 1/2 pound) ripe Roma tomatoes chopped
- 1/2 cup manzanilla olives stuffed with pimientos chopped
- 1/4 cup pickled jalapeños chopped
- 2 cans of sardines in oil (3-4 ounces) broken into chunks
- 2 eggs separated
- All-purpose flour for rolling out puff pastry

Jalapeno Sweet Potato Puffs

Preheat oven to 400 Grease 18 wells in mini muffin pan Fill with sweet potato mixture Bake for 20-25 minutes
- 1 1/2 cups mashed sweet potatoes
- 2 large eggs
- 3/4 cup cheddar or pepper jack cheese
- 3 TBS 2% plain greek yogurt
- 3 strips chopped cooked bacon
- 1 or 2 minced jalapenos

- 1 tablespoon vegetable oil
- 5 scallions, white and light green parts, chopped
- 2 garlic cloves, finely chopped
- 1 1/2 cups fresh corn kernels (from 2 medium ears)
- 1/2 cup whole milk

- 2 cups grated pepper Jack
- 1 10-oz. can enchilada sauce

- 1/2 cup Pecans Or Walnuts

- 3 packages (8 Ounces Each) Cream Cheese, Softened
- 1-1/2 cup Sugar
- 1-1/2 teaspoon Vanilla Extract

- Topping
- 4 cups Blackberries
- 1 cup Sugar
- 1/4 cup Water
- 2 Tablespoons Cornstarch

Sweet Potato Mac & Cheese

Position a rack in upper third of oven; preheat broiler
- 8 ounces whole-wheat elbow noodles (2 cups)
- 1 medium sweet potato (about 12 ounces)
- 2 cups nonfat milk
- 2 tablespoons all-purpose flour
- 1 small clove garlic, minced
- 1 1/4 cups shredded sharp Cheddar cheese
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup frozen peas, thawed
- 3 tablespoons coarse dry whole-wheat breadcrumbs (see Tip)
- 1 teaspoon extra-virgin olive oil
Blueberry Hand Pies

For the filling: Combine the blueberries and granulated sugar in a medium saucepan over medium heat
- Filling:
- 3 cups blueberries
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 2 teaspoons lemon zest plus juice of 1/2 lemon
- 1 teaspoon vanilla extract
- Pastry:
- 3 sheets frozen puff pastry (from two 17.3-ounce packages, such as Pepperidge Farm), thawed
- 1 large egg beaten with 2 tablespoons water
- Glaze:
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
