Cake Batter Cookie Pie

Preheat oven to 350°F. Place butter and sugars in the bowl of a stand mixer fitted with the paddle attachment
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup brown sugar, packed
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon butter extract (see note)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups all purpose flour
- 1/2 cup sprinkles (use “jimmies” for best results)
- 1/2 cup white chocolate chips
- 1/2 cup milk chocolate chips
- 1 pie crust (homemade or refrigerated)
Lasagna Soup

Heat one tablespoon olive oil in a large pot over medium-high heat
- 2 Tbsp extra virgin olive oil, divided
- 1 lb lean ground beef
- 1 large yellow onion, diced (2 cups)
- 3 - 5 garlic cloves, to taste, minced
- 4 cups low-sodium chicken broth
- 1 (14.5 oz) can petite diced tomatoes
- 1 (14.5 oz) can crushed tomatoes
- 2 1/2 Tbsp tomato paste
- 1 3/4 tsp dried basil
- 3/4 tsp dried oregano
- 1/2 tsp dried rosemary, crushed
- 1/2 tsp fennel seeds, crushed
- 1/2 tsp dried thyme
- 1 tsp granulated sugar
- 1 1/2 Tbsp chopped fresh parsley, plus more for garnish
- Salt and freshly ground black pepper, to taste
- 8 lasagna noodles, broken into bite size pieces (6.5 oz)
- 1 1/4 cups shredded mozzarella cheese (5 oz)
- 1/2 cup finely shredded parmesan cheese (2 oz)
- 8 oz ricotta cheese
Giant Lemon Sugar Cookies Recipe

Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy

- 1-1/2 cups sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1-1/2 teaspoons grated lemon peel
- 2 tablespoons lemon juice
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 4 teaspoons coarse sugar
Roasted Veggie Pasta

Preheat oven to 350 degrees F (175 degrees C)
- 1/4 pound fresh asparagus
- 2 red bell pepper, sliced
- 1/4 pound crimini mushrooms, sliced
- 10 cloves roasted garlic, chopped
- 1/2 tomato, quartered
- 1/2 teaspoon chopped fresh rosemary
- 1/2 teaspoon chopped fresh oregano
- 2 tablespoons olive oil
- 8 ounces dry fettuccini noodles
- 1/4 cup grated Parmesan cheese
- 2 tablespoons tapenade
Italian Eggplant Melts

- Four 3/4-inch-thick eggplant slices (cut widthwise from the center of a wide eggplant), patted dry
