Vegetarian Quiche

Preheat oven to 400 degrees F (200 degrees C)
- 1 (17.5 ounce) package frozen puff pastry, thawed
- 1 cup fresh spinach, cleaned and stemmed
- 4 tablespoons water
- 1/4 teaspoon ground nutmeg
- 1 onion, chopped
- 2 tablespoons butter
- 5 eggs
- 1 cup cottage cheese
- 1 cup shredded Cheddar cheese
- salt and pepper to taste
- 2 tomatoes, thinly sliced
Almond pastry puff

Preheat the oven to 220°C/425°F/gas 7
- 100 g blanched almonds
- 1 tablespoon double cream , plus extra to serve
- 75 g icing sugar , plus extra for dusting
- 2 large free-range eggs
- 375 g block of all-butter puff pastry , (cold)
White Chili

In large skillet, cook onion in oil for about 4 minutes or until transparent Add ground turkey and cook thoroughly
- 2 packages of white chili seasoning
- 1 medium onion, finely chopped
- 3 tablespoons of olive oil
- 1 four ounce can of chopped green chilies, drained
- 3 tablespoons all purpose flour
- 2 teaspoons ground cumin
- 2 cans Great Northern Beans (Bush 15.8 ounce size is what I use)
- 1 can of chicken broth (14.5 ounce size)
- 1 and a half pound of ground turkey (or chicken) {can use 1.5 cups of finely chopped cooked chicken if preferred}
- Shredded Monterey jack cheese (optional)
- Sour cream (optional)
- Salsa (optional)
Salmon and Couscous

- Salmon:
- 8 oz filet, salt and pepper
- Reduce balsamic vinegar until syrupy
- Roast salmon for 15 minutes at 400, brushing on balsamic glaze at the 10 minute point
- Couscous:
- Make marinade of Balsamic vinegar, olive oil, Dijon mustard, minced garlic and salt and pepper
- Marinate veggies (asparagus, onions, zucchini) for 15 minutes, then grill until slightly charred (you could also roast if you don’t want to babysit a grill pan); set aside and reserve marinade
- Make Israeli couscous according to package directions
- Chop veggies into bite size pieces and add to couscous. Pour in enough marinade to moisten. Top with diced tomato if Lou’s not eating.
Cajun Shrimp Skillet Recipe

In a large skillet, heat butter over medium-high heat
- 3 tablespoons butter
- 2 garlic cloves, minced
- 1/2 cup amber beer or beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon dried oregano
- 1 pound uncooked large shrimp, peeled and deveined
- Hot cooked grits, optional
Spinach & Feta Quiche

Heat oven to 375°F. In large skillet, saute onion and garlic in butter, app
- 1 ⁄2 cup butter
- 1 teaspoon bottled minced garlic
- 1 small onion, chopped
- 12 ounces shredded sharp cheddar cheese, divided
- 1 cup milk
- 4 eggs, lightly beaten
- salt & pepper, to taste
- 1 (10 ounce) box frozen chopped spinach, thawed & squeezed dry
- 6 ounces feta cheese with dried basil and tomato, crumbled
- 1 (4 ounce) jar sliced mushrooms, drained
- 1 frozen deep dish pie shell, slightly thawed
Mexican Lasagna

Saute onion in olive oil until soft
- 2 TBS olive oil
- 1 Package of taco seasoning mixed as directed on package (I added cumin and chili powder also)
- 3 Cups roasted chicken
- 1/2 Diced onion
- 2 Cups corn
- 1 1/2 Cups salsa
- 8 Flour tortillas
- 1 Package of Mexican cheese
Shrimp Fra Diavolo

1. Cook pasta according to package directions, omitting salt and fat
- 8 ounces uncooked linguine
- 2 tablespoons extra-virgin olive oil, divided
- 1 1/2 tablespoons minced garlic, divided
- 1 pound medium shrimp, peeled and deveined
- 3/4 cup diced onion
- 1 teaspoon crushed red pepper
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 2 tablespoons tomato paste
- 1 tablespoon fresh lemon juice
- 1 3/4 cups canned crushed tomatoes
- 1/4 teaspoon salt
Broccoli Tots

- 1 large egg
- 1/4 cup diced yellow onion
- 1/3 cup cheddar cheese
- 1/3 cup panko breadcrumbs
