Cream of Carrot Soup

Heat butter in a Dutch oven over medium heat; add carrots, potato, onion, celery, chicken broth, and ginger
- 1/4 cup butter, cubed
- 2 1/2 cups sliced carrots
- 1 large potato, peeled and cubed
- 1 cup chopped onion
- 1 stalk celery, chopped
- 3 cups chicken broth
- 1 teaspoon ground ginger
- 1/2 cup heavy whipping cream
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
Slow Cooker Chicken and Gravy (Weight Watchers)

Ideal slow cooker size: 4-Quart
- 6 boneless, skinless chicken breasts (5-6 ounces each, about 2 pounds total)
- 2 packages chicken gravy mix (I used McCormick)
- 1 can (10-3/4 ounces) low-fat, low-sodium cream of chicken soup (I used Campbell's Healthy Request)
- 2 cups water
- Fresh ground black pepper to taste
Caramel Apple Bread Pudding

HEAT oven to 350°F. MELT butter in large skillet on medium heat
- 1 Tbsp. butter
- 3 small Gala apples, peeled, chopped (about 3 cups)
- 25 KRAFT Caramels
- 1 can (12 oz.) evaporated milk, divided
- 1 can (14 oz.) sweetened condensed milk
- 4 eggs
- 1 tsp. vanilla
- 1/2 tsp. ground cinnamon
- 3/4 lb. unsliced white bread, cut into 1-inch cubes (about 8 cups)
- 1/2 cup dried cranberries
- 1 cup thawed COOL WHIP Whipped Topping
Mahi Tacos

For the Slaw: In mixing bowl mix all ingredients together except the cabbage
- Slaw:
- 1 cup mayonnaise
- 1/4 cup diced red peppers (roasted preferred)
- 1/4 cup diced green peppers
- 1/4 cup diced yellow onion
- 1/4 cup diced carrots
- 1/4 cup diced celery
- 1/4 cup chopped fresh cilantro leaves
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne powder
- 1/2 teaspoon seasoning salt
- 1/4 cup sugar
- 1/3 cup white vinegar
- 1 head green cabbage, quartered and sliced into thin strips
- BBQ Sauce:
- 1/2 cup mango chunks
- 2 roasted red bell peppers, (roasted at 400 degrees F, seeds and skin removed)
- 2 tablespoons balsamic vinegar
- 3 tablespoons white vinegar
- 1/2 tablespoon Caribbean jerk seasoning
- 1/4 tablespoon crushed red pepper flakes
- 1 cup BBQ sauce
- Cilantro White Sauce:
- 1 cup plain yogurt
- 1 cup sour cream
- 1/2 bunch chopped fresh cilantro leaves
- 1 lime, juiced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon blackening spice
- Guacamole:
- 2 fresh avocados, halved, pitted and flesh diced
- 2 fresh jalapenos, diced
- 1 lime, juiced
- 1/4 cup diced red onion diced
- 1 teaspoon fresh minced garlic
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 1/2 bunch chopped fresh cilantro leaves
- Tacos:
- 1 to 1 1/2 pounds mahi mahi, skinned and cleaned
- Blackening seasoning
- Olive oil
- 1 dozen (6-inch) flour tortillas
- 1 cup shredded cheese of choice
- 1 cup diced tomatoes

- For the ganache:
- 1/4 pound unsalted butter at room temperature
- 1 cup sugar
- 4 extra-large eggs at room temperature
- 1 (16-ounce) can chocolate syrup
- 1 tablespoon pure vanilla extract
- 1 cup all-purpose flour
- 1/2 cup heavy cream
- 8 ounces good semisweet chocolate chips
- 1 teaspoon instant coffee granules

- 1 tablespoon vegetable oil
- 1 1/2 pounds tomatoes, cored and halved
- 1 fresh poblano chile pepper, stemmed, quartered, and seeded
- 1 1/3 cups thinly sliced onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano, crushed
- 4 bone-in thighs, skinned
- 4 cups reduced-sodium chicken broth
- Tortilla chips
- Toppings: crumbled feta cheese, cilantro, sliced jalapeno peppers, chopped red onion, and/or lime wedges
