- 8 oz block of sharp cheddar cheese
- 1/2 cup olive oil
- 2 Tbsp honey
- 2 cloves garlic, smashed
- 4-6 sprigs of thyme

- 1 heaped tablespoon miso paste
- 2 x 150 g tuna steaks , (ideally 2cm thick), from sustainable sources

Preheat the oven to 400 degrees F
- 4 cups plus 1/4 cup all-purpose flour

- 3/4 pound (3 sticks) cold unsalted butter, diced

- 4 cups red bliss potatoes (about 1 pound), cut into 1 1/2-inch thick slices
- 3 medium parsnips (about1 pound), cut into 1 1/2-inch thick slices

In a large skillet, cook and crumble beef over medium-high heat until no longer pink, 4-6 minutes
