Whipped Sweet Potato Bake

1. HEAT oven to 350°F. Beat sweet potatoes, butter, cinnamon, ginger and nutmeg with mixer until blended
- 3 cans (15 oz. each) sweet potatoes, drained
- 1/4 cup (1/2 stick) butter or margarine, melted
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 3 cups JET-PUFFED Miniature Marshmallows
Mini Pineapple Cakes

1. Place an oven rack in the lower 1/3 of the oven
- 1 (3 1/2-pound) pineapple, peeled, cored and cut into 1-inch pieces* see Cook's Note
- 2 tablespoons pineapple juice plus 2/3 cup
- 1/2 cup packed light brown sugar
- 2 tablespoons unsalted butter, at room temperature
- 3 egg whites
- 2/3 cup water
- 2/3 cup vegetable oil
- 1 1/2 teaspoons almond extract
- 1 (18.25-ounce) box white cake mix (recommended: Betty Crocker Super Moist)

Slow Cooker Sweet Potatoes

Butter the inside bottom and sides of your stoneware
- 12 oz bag of peeled and sliced sweet potatoes (or 3-4 peeled and chopped real ones)
- 1 t vanilla
- 1/4 cup brown sugar
- 1/2 t cinnamon
- a teeny tiny pinch of Kosher salt
- pat of butter (not a lot, it's just to grease the crock)
- 1/4 cup of orange juice
- enough mini marshmallows to dot on top

- •2 large egg white
- •2/3 cup sugar

- 1 1/2 cups chopped Oreo cookies (Halloween colors)
