- Dressing:
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 teaspoon grated orange rind
- 1/2 teaspoon minced fresh oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon crushed red pepper
- 1 large garlic clove, minced
- Flatbreads:
- 1 (4-ounce) piece fresh pizza dough, halved
- 1 tablespoon olive oil Cooking spray
- 1 garlic clove, halved
- Salad:
- 1 large Japanese eggplant, cut diagonally into 1/2-inch-thick slices (about 10 ounces)
- 12 ounces baby zucchini, halved lengthwise (about 8)
- 1 red bell pepper, quartered and seeded
- 1 small sweet onion, cut into 1/2-inch-thick slices
- 10 large sliced pitted green olives
- 2 globe tomatoes, each cut into 8 wedges
- 3 tablespoons pine nuts, toasted 1 cup fresh basil leaves, torn
- 4 ounces fresh mozzarella cheese, thinly sliced and torn into pieces
- 4 caper berries with stems, rinsed and drained
Kielbasa Kabobs

For a nice presentation, insert skewers into half of a fresh pineapple that's been sliced lengthwise
- 12 wooden skewers (6 to 8-in)
- 2 rings (1 lb each) fully cooked kielbasa sausage
- 1/4 cup apricot preserves
- 2 Tbsp orange juice

- 3/4 cup mayonnaise
- 1/4 cup finely chopped celery
- 2 Tbsp fresh lemon juice
- 2 Tbsp chopped parsley
- 1 Tbsp minced shallot
- 1 Tbsp whole-grain mustard
- 1 Tbsp ketchup
- 2 tsp Worcestershire sauce
- 1 tsp Tabasco sauce or other favorite hot sauce, to taste
- 1/2 tsp minced garlic
- Kosher salt and freshly ground black pepper

- 1 pound plum tomatoes or 1 (28- to 32-ounce) can whole tomatoes in juice, drained
- 1/4 teaspoon salt
- 3 tablespoons extra-virgin olive oil plus additional for brushing
- 6 ounces mozzarella, coarsely grated (1 1/2 cups)
- Pizza dough or 1 pound thawed frozen pizza dough, divided and formed into 2 balls
- Flour for dusting

- 1/2 cup granulated sugar

- 6 Tbsp. cold, unsalted butter cut in cubes
- Whipped cream to serve

- 6 tablespoons (3/4 stick) butter, melted
- 3 3/4 cups bread flour
- 1 1/2 tablespoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons salt
- 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
- 2 1/2 cups (packed) goarsely grated extra-sharp cheddar cheese (about 12 ounces)

White Bean-and-Asparagus Salad
