Smashed Red Potatoes with Bay Leaves

New potatoes get parboiled, coarsely "smashed," then crisped in the oven
- 2 lb baby red-skinned potatoes (about 1 inch in diameter)
- 2 Tbsp (1/4 stick) butter
- 2 Tbsp olive oil
- 3 small bay leaves (preferably Turkish)
Baked Eggs with Tomato & Feta

Eggs are baked in a seasoned fresh tomato sauce and topped with feta cheese
- 2 tablespoons olive oil
- 1 yellow onion, finely chopped
- 1 (28-ounce) can whole plum tomatoes
- 2 tablespoons whole-grain mustard
- 1 teaspoon red pepper flakes
- 1/4 cup heavy cream
- Kosher salt and freshly ground pepper
- 8 eggs
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh flat-leaf parsley, or oregano
Marinated Shrimp Salad

1 In a large bowl, combine shrimp and next 5 ingredients; toss gently
- 1 lb medium fresh cooked shrimp, peeled and deveined
- 1 (14-oz) can hearts of palm, drained and cut into bite-sized pieces
- 1 (8-oz) can bamboo shoots, drained
- 1 (8-oz) can artichoke hearts, drained and quartered
- 1 (8-oz) package sliced fresh mushrooms
- 1 pint cherry tomatoes, halved
- 1 1/2 cups vegetable oil
- 1 cup white vinegar
- 3/4 cup chopped fresh parsley
- 3 garlic cloves, minced
- 1 Tbsp salt
- 1 1/2 tsp dried thyme leaves
- 1 tsp ground black pepper.

- 2 2 2 eggs
- 1/4 1/4 1/4 cup milk
- salt and freshly ground black pepper
- 5 5 5 tablespoon butter, softened
- 6 6 6 pieces thinly sliced white bread
- 4 4 slices 4 thin slices cooked turkey
- 4 4 slices 4 thin slices cooked ham
- 4 4 slices 4 thin slices swiss cheese
- Confectioners’ sugar
- Red currant jelly
- Lightly beat eggs and milk in a shallow bowl. Season with salt and pepper and set aside.
Buttermilk Substitute

- 1/3 cup balsamic vinegar
- 1 tsp agar agar
- 1-3 cups olive oil (grocery store brand, not expensive)
Apple Nut Cake with Rum Sauce

1. In a large bowl, combine the apples and sugar
- Sauce:
- 4 cups chopped peled apples
- 2 cups sugar
- 2 eggs
- 1/2 cup canola oil
- 1 tsp almond extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup chopped pecans
- 1/2 cup butter, cubed
- 1 cup sugar
- 2 Tbsp all-purpose flour
- 1/8 tsp salt
- 1 cup water
- 2 tsp vanilla extract
- 1/2 tsp rum extract
Spinach, Tomato, and Ricotta Frittata

- 8 8 8 large eggs
- 2 2 2 Tbs. whole milk
- 1/2 1/2 1/2 cup frozen, thawed, chopped spinach, squeezed dry
- 1/2 1/2 1/2 oz. freshly grated Parmigiano-Reggiano (1/2 cup)
- Kosher salt and coarsely ground black pepper
- 2 2 2 Tbs. unsalted butter
- 1 1 1 small onion, chopped
- 1 1 1 small plum tomato, thinly sliced crosswise
- 1/3 1/3 1/3 cup whole-milk ricotta
- to 375°F. rack in the center of the oven and heat the oven to 375°F.
- 1/2 1/2 eggs and milk in a medium bowl. Add the spinach, half of the Parmigiano, 1/2 tsp. salt, and 1/2 tsp. pepper and mix well.
- 1/4 1/4 10 tsp. salt and a few grinds of pepper and then the remaining 1/4 cup of the Parmigiano. Bake until the ricotta is heated through, about 10 minutes. Let cool slightly before slicing and serving.
