Double-Lemon Scones

Pennsylvania Dutch Apple Butter

- 3/4 cup unsweetened apple cider or juice
- 1/3 cup sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves

- For the shortcakes:
- 2 hard-boiled egg yolks, cooled

- 3 tablespoons semolina flour or fine-grind cornmeal

In a large saucepan, combine the first 20 ingredients; bring to a boil
- 1 1/2 cups sugar
- 1 1/2 cups ketchup
- 1/2 cup water
- 1/4 cup lemon juice
- 1/4 cup cider vinegar
- 1/4 cup worcestershire sauce
- 2 TBsp plus 2 tsp chili powder
- 2 Tbsp plus 2 tsp prepared mustard
- 1 tsp salt
- 1/2 tsp crushed red pepper flakes
- 2 broiler fryer chickens (3 1/2 to 4 lbs each), cut up
Lemon Grits

Bring the water to a boil in a saucepan
- 3 cups water
- 1 cup quick-cooking white grits
- salt and freshly ground white pepper to taste
- grated zest and juice of 2 or 3 lemons
- butter to taste
- 8 ounces mascarpone cheese, or to taste
