Parchment Shrimp Scampi

Ingredients

  • 1 piece of parchment paper 17x12
  • 5 tiger prawns, peeled and deveined (12 per pound)
  • portion of cooked angel hair pasta (I used whole grain)
  • 4 pieces grilled asparagus or blanche and shock in ice water
  • 1 tomato, cut in half and roasted
  • 1 grilled portobello mushroom, cut in half, or baby bellas, whole
  • 2 tablespoon herb garlic butter
  • Salt and pepper to taste

Preparation

Step 1

Marinate shrimp in olive oil for a couple hours.

Lay parchment paper down with long side on top. Lightly brush with oil. Place angel hair pasta in center of paper, place asparagus at angle on top of pasta, place mushroom and tomato along one side of asparagus,and then on the other side. then place shrimp on pasta, shingling off of asparagus. Portion out butter on top of pasta. Season with salt and pepper.
Bring top of paper to the bottom, begin to fold and seal paper at the opened ends. Lightly brush top of envelope with oil. Preheat oven to 370 degrees. Place sealed parchment package on a sheet pan and bake in oven for 20-25 minutes. Use less time if using smaller shrimp. When cooked, transfer to a plate.

Vegetables can be cooked the day before. Day of the dinner, cook pasta and assemble packets. Refrigerate until ready to use. Then, roast as described above.
