Gnocchi I

Bring a large pot of salted water to a boil
- 2 potatoes
- 2 cups all-purpose flour
- 1 egg
Homemade Manti (Traditional Turkish Dumplings)

Combine the flour and salt in a mixing bowl
- 2 cups flour
- 1/2 teaspoon salt
- 2 eggs
- 1/2 teaspoon water, or as needed
- 2 onions, peeled
- 1/2 pound ground beef
- salt and pepper to taste
- 3 tablespoons vegetable oil
- 1 tablespoon red pepper flakes
- 1 tablespoon paprika
- 1 tablespoon minced garlic
- 1 (8 ounce) container plain yogurt
Traditional Style Vegan Shepherd's Pie

Place the potatoes in a pot, cover with cold water, and bring to a boil over medium-high heat
- Mashed potato layer:
- 5 russet potatoes, peeled and cut into 1-inch cubes
- 1/2 cup vegan mayonnaise
- 1/2 cup soy milk
- 1/4 cup olive oil
- 3 tablespoons vegan cream cheese substitute (such as Tofutti ®)
- 2 teaspoons salt
- Bottom layer:
- 1 tablespoon vegetable oil
- 1 large yellow onion, chopped
- 2 carrots, chopped
- 3 stalks celery, chopped
- 1/2 cup frozen peas
- 1 tomato, chopped
- 1 teaspoon Italian seasoning
- 1 clove garlic, minced, or more to taste
- 1 pinch ground black pepper to taste
- 1 (14 ounce) package vegetarian ground beef substitute
- 1/2 cup shredded Cheddar-style soy cheese
Yumm Bowl Sauce (cooked bean version)

Yum sauce
- 1/2 C canola oil
- 1/2 C almonds (for a creamier sauce, use almond flour)
- 1/3 C nutritional yeast (Whole Foods)
- 1/2 C chickpeas or 1/2 C garbanzo beans, cooked
- 1/4 C soybeans, cooked
- 1/2 C filtered water (I just used bottled water)
- 1/2 C fresh lemon juice
- 1/2 tsp salt
- 1 1/2 tsp curry powder
- 1 tsp. dried oregano
- 1 tsp dried cilantro
Italian Sausage and Zucchini

In a large skillet over medium heat, brown the Italian sausage until the inside is no longer pink
- 1 1/2 pounds Italian sausage links
- 2 small zucchini, sliced
- 1 small yellow squash, sliced
- 1/2 cup chopped onion
- 1 (14.5 ounce) can stewed tomatoes, with liquid
Fresh Pesto

Start chopping the garlic along with about 1/3 of the basil leaves
- 1 large bunch of basil, leaves only, washed and dried
- 3 medium cloves of garlic
- one small handful of raw pine nuts
- roughly 3/4 cup Parmesan, loosely packed and FRESHLY GRATED
- A few tablespoons of extra-virgin olive oil
Stuffed Eggplant

Stuffed Eggplant
- 2 Tbs olive oil
- canola or vegetable oil to fry eggplant
- 6 eggplants, peeled in stripes lengthwise
- 2 chopped onions
- 2-3 cloves garlic, minced
- 1 diced green pepper
- 1/2 lb ground meat
- 1 diced tomato
- 2 Tbs tomato paste
- 1/2 bunch finely chopped parsley
- 1/4 tsp ground pepper
- 2 tsp salt
- 1 cup hot water
- 1 tomato sliced in half moons
- 3 green banana peppers cut in half lengthwise
- served with yogurt and cooked rice
Maple & Honey Syrup

Maple & Honey Syrup
- 1 cup water
- 2 tablespoons honey
- 1/2 teaspoons maple extract
- 2 cups white sugar
- 1/4 cup brown sugar
Fluffy Pancakes

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour"
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
