Pickled Green Tomatoes

- Makes four pints or two quarts of pickles
- 2 qt cherry tomatoes or about 6-8 full size tomatoes – firm and very green
- 2.5 c water
- 2.5 c white vinegar
- 3 T kosher salt
- 3 T sugar
- 4 garlic cloves, peeled
- 4 T coriander seed
- 4 T yellow mustard seed
- 4 T black peppercorns
- 4 bay leaves
- 4 small red chiles, optional
Waldorf Wheat Berry Salad

1. Soak the wheat berries in 1 cup of hot water for at least one hour
- 1 cup wheat berries
- 3 cup hot water for soaking
- 1/3 cup safflower oil
- 1/4 apple juice
- 2 tablespoons rice vinegar
- 2 tablespoons agave nectar
- 3/4 teaspoon sea salt
- 1/2 teaspoon pepper
- 2 celery stalks, thinly sliced
- 2 scallions, thinly sliced
- 1 sweet-tart apple, such as Fuji, Jonathan, or Mcintosh, cut into 1/2 inch cubes
- 1/2 small red onion, cut into 1/4 inch dice
- 1/2 cup dried cranberries
- 1/2 cup dried cranberries
- 1/2 chopped pecans
- 1/2 cup chopped fresh Italian parsley
Quinoa and Mushroom Stuffed Squash

When cooking, I like to think of each step in the process as an opportunity to add flavor to the final product
- 3 acorn, or acorn-like squash, cut in half
- 1 c quinoa
- 2 c vegetable broth
- 1/2 c raw pecans, chopped
- 1/2 c raw pepitas
- Olive oil
- 1 shallot, coarsely chopped
- 2 cloves garlic, minced
- 1 1/2 c cremini mushrooms, chopped
- 1 t. fresh thyme leaves
- 1 t. fresh rosemary, minced
- 1/3 c kalamata olives, chopped
- Salt and fresh ground black pepper
Gazpacho

Gazpacho
- 4 cups tomato juice
- 1 onion, minced
- 1 green bell pepper, minced
- 1 cucumber, chopped
- 2 cups chopped tomatoes
- 2 green onions, chopped
- 1 clove garlic, minced
- 3 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 1 teaspoon dried tarragon
- 1 teaspoon dried basil
- 1/4 cup chopped fresh parsley
- 1 teaspoon white sugar
- salt and pepper to taste
Bruschetta in a Jar

1.) PREPARE boiling water canner
- 5 cloves garlic, minced
- 1 cup dry white wine
- 1 cup white wine vinegar
- 1/2 cup water
- 2 Tbsp sugar
- 2 Tbsp dried basil
- 2 Tbsp dried oregano
- 2 Tbsp balsamic vinegar
- 9 cups chopped cored plum tomatoes (about 4 lb or 12 medium)
- 7 (8 oz) half pint glass preserving jars with lids and bands
Tortilla Soup

Despite having a lot of ingredients, it is really easy to make this soup
- 4 cooked and shredded chicken breasts
- 5 cups of chicken broth
- 1 chopped poblano pepper seeded
- 4 diced roma tomatoes
- 3 stalks of celery chopped
- 1 bay leaf
- 1 large yellow onion chopped
- 5 cloves of minced garlic
- 1 or 2 chopped bell peppers
- 2 tablespoons cumin
- 1 1/2 tablespoons chili powder
- 1 teaspoon oregano
- a dash of garlic and onion powder
- Salt and pepper to taste
- a bunch of cilantro minced (big handful stalks and all)
- served with corn tortillas (cut in fourths)
- sliced avocado
- a pinch of cheese
Basil-Garlic Tomato Sauce

1.) PREPARE boiling water canner
- 20 lb tomatoes (about 60 medium)
- 1 cup chopped onion (about 1 large)
- 8 cloves garlic, minced
- 1 Tbsp olive oil
- 1/4 cup finely minced, fresh basil
- 1/4 tsp Ball® Citric Acid or 1 Tbsp bottled lemon juice per hot jar
- 7 (16 oz) pint glass preserving jars with lids and bands
Burrito Pie

Preheat oven to 350 degrees F (175 degrees C)
- 2 pounds ground beef
- 1 onion, chopped
- 2 teaspoons minced garlic
- 1 (2 ounce) can black olives, sliced
- 1 (4 ounce) can diced green chili peppers
- 1 (10 ounce) can diced tomatoes with green chile peppers
- 1 (16 ounce) jar taco sauce
- 2 (16 ounce) cans refried beans
- 12 (8 inch) flour tortillas
- 9 ounces shredded Colby cheese
Salmon Cakes II

Salmon Cakes
- 1 (14.75 ounce) can salmon, drained and flaked
- 1 small onion, minced
- 1 egg
- 1/2 cup fresh bread crumbs
- 1 tablespoon Worcestershire sauce
- 1/8 teaspoon hot pepper sauce
- 1/4 teaspoon ground black pepper
- 1/4 cup shredded Cheddar cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons all-purpose flour for coating
- 1/4 cup butter
- 3 tablespoons olive oil
Chili

Mix all ingredients and heat till hot
- 1 teaspoon flour
- 1/2 teaspoon chilli powder
- 1/2 teaspoon red pepper flakes
- 2 tablespoons onion
- 1 teaspoon diced onion
- 1 teaspoon salt
- 1/2 teaspoon garlic
- 1 1/2 teaspoon cumin
- 1/8 teaspoon cayenne
- package of soy crumbles
- 1/2 diced onion
- olive oil
- 1 can rotel
- 1 can red beans
- 1 can black beans
- 1 can chili beans
- 1 can whole tomatoes
