Carrot Cake Jam

1.) PREPARE boiling water canner
- 1-1/2 cups finely grated peeled carrots
- 1-1/2 cups chopped cored peeled pears
- 1-3/4 cups chopped pineapple, including juice
- 3 Tbsp lemon juice
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 6 Tbsp Ball® RealFruit® Classic Pectin
- 6-1/2 cups sugar
- 6 (8 oz) half pint glass preserving jars with lids and bands

Preheat the oven to 400 degrees F (200 degrees C)
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 1/4 cups confectioners' sugar
- 2 egg yolks
- 1/2 teaspoon almond extract
- 1 teaspoon vanilla extract

- 4 lbs of good cooking apples (we use Granny Smith or Gravenstein)
- 1 cup apple cider vinegar
- 2 cups water
- Sugar (about 4 cups, see cooking instructions)
- Salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon allspice
- Grated rind and juice of 1 lemon
- 1 wide 8-quart pan (Stainless steel or copper with stainless steel lining)
- A food mill or a chinois sieve
- A large (8 cup) measuring cup pourer
- 6-8 8-ounce canning jars
Canned Tomato Sauce (Le Bottiglie di Pomodoro)

Canned Tomato Sauce (Le Bottiglie di Pomodoro)
- 1 cup of olive oil
- 1 \2 to 3\4 cup of red wine
- 1 \3 cup of dried herbs (whatever you like…..I use a mixture of rosemary, basil, oregano….. and just a bit of sage, if I have it growing on my balcony)
- 6 to 7 large garlics, smashed
- 4 to 6 large bay leaves
- Salt, to taste

Dinner in a Pumpkin
- 1 1/2 pounds ground beef
- 1 pound ground pork sausage
- salt and pepper to taste
- 2 tablespoons pumpkin pie spice
- 2 tablespoons brown sugar
- 2 (14.5 ounce) cans chicken stock
- 1 1/2 cups long grain and wild rice mix
- 1 sugar pumpkin
- 1 (10.75 ounce) can condensed cream of celery soup
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 2 (4 ounce) cans mushroom stems and pieces, drained

- 3/4 cup margarine, melted
- 1 cup white sugar
- 1 egg
- 1/4 cup molasses
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/2 cup white sugar

Line a baking sheet with waxed paper; set aside
- 1 1/2 cups creamy peanut butter
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners' sugar
- 6 ounces semi-sweet chocolate chips
- 2 tablespoons shortening

- 5 lbsgreen tomatoes, chopped small (as you prefer for salsa)
- 6 yellow onions, chopped (4 cups)
- 3 jalapenos, chopped with seeds (1/2 cup)
- 4 largered bell peppers, chopped (2 cups)
- 6 garlic cloves, minced
- 1 cupfresh cilantro, chopped
- 1 cuplime juice
- 1/2 cupvinegar
- 1 tablespoonsalt
- 1/2 tablespooncumin
- 1 tablespoondried oregano leaves
- 2 teaspoonspepper
- 1/4 teaspooncayenne (optional, to taste)
- 1 -2 teaspoonsugar
