- 1 tb vinegar or lemon juice
- 1 tsp chives or green onion, chopped

Crab Bisque

1) Thaw and drain frozen crab meat; remove cartilage
- 8 oz canned or frozen crab meat
- 10 oz can cream of tomato soup
- 10 oz can pea soup
- 2 soup cans milk
- 1 cup heavy cream
- 1/4 cup sherry
- salt and pepper
- 1/4 cup commercial sour cream
- 1 tsp dillweed
Patti's Layered Salad

1)Layer lettuce, celery, onion, peas, mushrooms, and water chestnuts in a flat salad bowl
- 1 head red lettuce
- 1 cup chopped celery
- 1 medium onion, sliced (spanish or red)
- 2 cups frozen peas, blanched
- 8-10 mushrooms, sliced
- 1 small can diced water chestnuts
- 1 cup mayo
- sprinkle 2 tb sugar
- 1/2 cup cheddar or parmesan, grated
- 6 slices bacon, broken up
Beef Choufleur

1) Cut meat into 1/2 inch squares
- 1 lb boneless round steak, cut 1/3 inch thick
- 1 small head cauliflower
- 2 tb butter or margarine
- 1 green pepper, cut in 3/4 inch pieces
- 1/4 cup soy sauce
- 1 clove garlic, minced
- 2 tb cornstarch
- 1/2 tsp sugar
- 1 1/2 cups beef broth or water
- 1 cup sliced green onions with tops
- 3 cups hot cooked rice
Corn Cakes with Indian Candied Salmon

1) Mix together the flour, salt and baking powder
- 1/2 cup all-purpose flour
- Pinch of salt
- 1/2 tsp baking powder
- 1 egg
- 3/8 cup homogenized milk
- 1/3 cup corn, frozen
- 1 tb chives, chopped
- 1 tb butter, melted
- 3 oz cream cheese
- 1 tb horseradish
- 3 oz Indian candied salmon or smoked salmon
- Chives, chopped for garnish

- 1 cup cabbage, shredded
- 1 can (15 oz) tomatoes
- 1/4 cup rice or 1/2 cup macaroni elbow noodles
- 1 1/2 quarts water
- 1 bay leaf
- 1/2 tsp thyme
- 5 tsp salt
- pepper to taste
- 1 tsp worcestershire sauce
- 1/2 cup parmesan, grated
