Hot & Sour Soup

1) Combine chicken broth, water, mushrooms, cornstarch, soy sauce, vinegar and tobasco in medium saucepan
- 1 (284 ml) can chicken broth
- ? soup cans water
- 1 (284 ml) can mushrooms, sliced or stems and pieces, drained)
- ? tb cornstarch
- 2 tb cornstarch
- 2 tb soy sauce
- 2 tb white vinegar
- 1 tsp tobasco
- 1 egg, beaten
- 2 green onions and tops, chopeped
Ahi Dipping Sauce

1) Mix wasabi and sesame seed oil well
- 1/2 tube wasabi
- 1 tb sesame seed oil
- 1/2 cup Kikkoman soya sauce light
- 1 tsp honey
- 1 tsp powdered ginger
- 1 tsp chives or scallion tops, minced
Chicken & Wild Rice Casserole

1) Cook onion in butter until tender but not brown
- 1 cup wild rice, cooked
- 1/2 cup onion, chopped
- 1/2 cup butter
- 1/4 cup flour
- 10 oz can sliced mushrooms
- 1 cup chicken broth
- 1 1/2 cups light cream
- 3 cups chicken, cooked and diced
- 1/4 cup pimento, diced
- 2 tb parsley, snipped
- 1 1/2 tsp pepper
- 1/2 cup almonds, slivered
Chocolate Chip Drop Cookies

1) Cream the butter and gradually add brown and white sugar
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 tsp vanilla
- 1 cup & 2 tb all purpose flour, sifted
- 1/2 tsp salt
- 1/2 tsp soda
- 1/2 cup nut meats, chopped
- 1/2 cup semi-sweet chocolate chips
French Onion Soup

1) In a heavy 4-5 quart saucepan or a soup kettle, melt the butter with the oil over moderate heat
- Soup:
- 4 tb butter
- 2 tb vegetable oil
- 2 lbs onions, thinly sliced
- 1 tsp salt
- 3 tb flour
- 2 quarts beef stock, fresh or canned, or beef or chicken stock combined
- Croutes:
- 12 - 16 one onch thick slices of french bread
- 2 tsp olive oil
- 1 garlic clove, cut
- 1 cup grated, imported swiss cheese or swiss and freshly grated parmesan cheese combined

- 8-12 chicken pieces
- 1/4 cup lemon juice
- 1/4 cup soya sauce
- 1/4 cup liquid honey

Shrimp Paste

1) In a kettle or large saucepan bring water to boil
- 2 quarts water
- 1/2 cup white inion
- slice of onion
- 6 sprigs of parsley
- 4 celery leaves
- 6 peppercorns
- 1 lb fresh shrimp
- 2 tb lemon juice
- 1/4 cup dry sherry
- 1 1/2 tsp dijon mustard1/2 tsp mace
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1 stick (8 tb) butter, softened
- 2 tb parsley, chopped
Dark Chocolate Mousse

1) Whip meringue and cream to stiff peak and chill
- 1 cup meringue
- 1 cup heavy cream
- 2 oz cocoa powder
- 3 oz warm water
- 1 oz coffee or liquor
- 3 oz semi sweet chocolate - melted
- 3 egg yolks
- 3 oz sugar
