Chocolate Mousse Roulade

1) Preheat oven to 375 degrees
- Roulade:
- 1-2 tb espresso or strong coffee
- 6 eggs, separated
- 3/4 cup sugar
- 1/4 cup powdered cocoa, unsweetened
- pinch of salt
- Mousse:
- 6 oz cocoa or lindt or toblerone bitter-sweet chocolate
- 1/3 cup sugar
- 4 egg yolks
- 4 egg whites, beaten
- 6 tb butter
- 1 cup whipped cream
- optional: 1/3 cup rum-soaked currants
Chocolate Macadamia Nut Tart

1) The crust: Mix the flour and cocoa in a large bowl
- Crust:
- 2 cups all purpose flour
- 1/4 cup cocoa powder, unsweetened
- 3/4 cup (11/2 sticks) unsalted butter, cut into pieces, room temperature
- 1/2 cup sugar
- 2 extra-large egg yolks
- 1 tb whipping cream
- 1 tsp vanilla extract
- 1/2 tsp salt
- Filling:
- 11/2 cups raw macadamia nuts, unsalted
- 6 oz bittersweet or semi-sweet chocolate, chopped
- 2/3 cup dark corn syrup
- 2/3 cup sugar
- 2 extra-large eggs
- 1 extra large egg white
- 2 tb (1/4 stick) unsalted butter, melted
- 1 tsp dark rum
- Whipped cream
Baked Papaya

1) Heat oven to 450. Blend 4 cups ingredients
- 3 Papaya, cut in half and seeded
- 1 1/2 cup cream cheese
- 1 1/2 cup cottage cheese
- 1 tb curry powder
- 2 tb mango and ginger chutney
- 2 tb raisins
- 1/2 cup water chestnuts, chopped
- 1/4 cup butter, melted
- 1/4 cup sugar & cinnamon
Italian Sausage & Pasta Bake

1) Cut sausage into 1/2 inch chunks
- 1 1/2 lb mild or hot Italian sausage
- 2 onions, coarsely chopped
- 3 cloves garlic, minced
- 1 large sweet red pepper, coarsely chopped
- 4 cups meatless tomato sauce
- 1 can (7 1/2 oz) tomato sauce
- 1 tb each dried basil, oregano and fennel seeds
- 5 cups penne pasta
- 1 pkg. fresh spinach, trimmed and coarsely chopped
- 3 cups provolone or mozzarella cheese, shredded
- 1 cup asiago or parmesan cheese, grated
Penne all Arrabiata

1) Cook pasta in salted boiling water until al dente (about 9 minutes)
- 1 lb penne pasta
- 1 pt fresh tomato sauce
- 1 tb olive oil
- 2 garlic cloves, finely chopped
- 1 tsp crushed chili pepper

- 2 oz parmesan cheese, freshly grated
