  • 6 oz cocoa or lindt or toblerone bitter-sweet chocolate
  • 1/3 cup sugar
  • 4 egg yolks
  • 4 egg whites, beaten
  • 6 tb butter
  • 1 cup whipped cream
  • optional: 1/3 cup rum-soaked currants

  • 11/2 cups raw macadamia nuts, unsalted
  • 6 oz bittersweet or semi-sweet chocolate, chopped
  • 2/3 cup dark corn syrup
  • 2/3 cup sugar
  • 2 extra-large eggs
  • 1 extra large egg white
  • 2 tb (1/4 stick) unsalted butter, melted
  • 1 tsp dark rum
  • Whipped cream
