Pumpkin Morning Glory muffins

Put your oven rack in the lower third of the oven and preheat to 350 degrees F
- scant 1 cup sugar
- 1 1/4 cups all-purpose flour
- 1 cup white whole wheat flour
- 2 1/2 tsp ground cinnamon
- 1/2 tsp chai spice (use all cinnamon if you wish)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup shredded, sweetened coconut
- 3/4 cup raisins
- 1 large apple, peeled and grated
- 8 ounces (1 cup) crushed pineapple, drained
- 2 cups grated carrots
- 1/2 cup coarsely chopped pecans or walnuts
- 3 large eggs
- 1/2 cup vegetable oil
- 1/2 cup canned (plain) pumpkin
- 1 teaspoon pure vanilla extract

- (1/2 C semisweet chocolate chips - I would use less or even none - this many overpowered the banana-cherry taste)
