Paleo Crunchy Fruit and Nut Granola

I finally made a crunchy baked granola
- Ingredients:
- 3 cups mixed activated nuts and seeds – include almonds, walnuts, pepitas, and sunflower seeds
- 1 cup pitted dates
- 1 cup sultanas
- 1 cup goji berries
- 1 cup de stemmed dried figs
- 1 cup dried coconut
- 1 tsp ground cinnamon
- 1 tsp vanilla powder or paste
- 1/2 cup coconut sugar
- 1/2 cup honey
- 1/2 cup maple syrup
- 3/4 cup coconut oil

Add the celery, greens, mushrooms, cauliflower and herbs to a pot and place onto a cold stove
- 1 large or 2 small zucchini
- 2-3 cup fresh greens such as baby spinach, lettuce and rocket.
- 1 Lebanese cucumber
- 3 diced celery stalks
- 3 large silverbeet or spinach leaves and stems sliced finely
- 3 mushrooms sliced
- 1 cup chopped, grated or riced cauliflower
- 1 tin smoked oysters in springwater
- 1 tsp dried chives or 1 tbs fresh chopped chives
- 1 tsp dried mixed herbs
- 1-2 tbs dark Miso
- 4 tbs dulse flakes
- Himalayan salt and black pepper
- Ground nuts and seeds to serve - I add Luving Life Wholefoods Nut Free Multi Purpose Bread mix and chopped walnuts.

Cinnamon Caramel Protein Tart

Line a 12 cm glass Pyrex bowl with non-stick baking paper if you don’t have a quick release tart pan
- Base:
- 4 tbs (1/2 cup) rolled oats
- 4 tbs (1/2 cup) dried coconut
- 4 tbs (1/2 cup) pitted dried dates
- 1 heaped tbs raw cacao powder
- 1-2 tbs raw honey or maple syrup
- 1 tbs coconut oil
- Filling:
- 3 tbs Oat flour (ground rolled oats)
- 3 tbs Protein Supplies Australia Vanilla Pea Protein Powder or similar
- 10 pitted dates or about 5-6 large pitted Medjools
- 2 tbs raw honey or maple syrup
- 1 tsp psyllium husk or seeds
- 1/2 tsp ground cinnamon
- 250 ml warm water or coconut milk

Tangy Mango Muffins with Crisp Coconut Toffee Top

Muffins: Preheat oven to 170oc and line a 6 muffin pan with liners
- Muffins:
- 1/2 cup dates
- 1/2 cup nearly ripe mango flesh
- 3 eggs or 3 tbs psyllium egg
- 2 tbs coconut oil
- 2 tbs honey or rice syrup
- 1/8 th tsp stevia powder
- 2 tbs oat flour or flax meal
- 3 tbs coconut flour (48g)
- Pinch salt
- 1/4 tsp baking soda (1/2 tsp if using psyllium egg)
- Psyllium Egg:
- To 2 tsp psyllium seeds or powder add 120 ml of hot water and let sit for 20-30 minutes.
- Topping:
- 3 tbs dried coconut
- 2 tbs oat flour or flax meal
- 2 tbs honey or rice syrup
- 2 tbs coconut oil
- 2-3 tbs walnut pieces - optional
