Sweet Potato Chili with Guacamole and Vegan Sour Cream

Makes: 4 servings Add 1-2 tbs olive oil to a medium pot on medium
- 1 onion or 3-4 inches of leek
- 1 carrot
- 1 celery stalk
- 1/2 red capsicum (pepper)
- 4 tomatoes
- 2 tbs tomato paste
- 2 cloves garlic
- 2 tbs Cajun seasoning
- 1 tsp cumin
- 1/2 tsp ground cinnamon
- 1 sweet potato
- 1/2 eggplant (aubergine)
- 1/2 zucchini (courgette)
- 3/4 cup fresh or frozen corn
- 1 tin Kidney bean
Paleo Vegetable Latkes

Add your choice of vegetables to a large mixing bowl then add the seasonings and herbs
- Choose 2-3 of the following vegetables, peel, then grate if applicable.
- 1 carrot
- 1 sweet potato
- 1 white potato
- 1/2 beetroot
- 1 zucchini
- 1 large cauliflower floret
- 2-4 tbs ground seeds *see note
- 1 egg or 2 egg whites
- Salt and pepper to taste
- Optional extras
- Mixed herbs
- Oregano
- Chives
- 1/3 - 1/2 onion diced
- Parsley
- Rosemary

Makes: 27 Preheat oven to 150 degrees Celcius and line 2 baking trays with non stick baking paper
- 1 cup rolled oats
- 1 cup dried coconut
- 1 cup almond meal
- 2/3 cup cup chopped pistachios
- 1/2 cup coconut sugar
- Zest of one lemon and a Lime if you have one!
- 3 tbs honey
- 3 tbs butter or coconut oil
- 1/2 tsp baking powder
- 1 tbs water
Market Haul Miso Soup – a quick Paleo lunch

Add a cup of water to a medium pan and put in on a medium heat
- 4 cups chopped broccoli spinach washed and sliced
- 3 large leaves of swiss chard (silver beet or spinach) washed and sliced including the stalks
- 1 large florrette of cauliflower roughly chopped
- 1 large diced tomato
- 1 cup dried organic Nori (I get mine from RawPleasure.com.au)
- Hand full chopped fresh chives
- Handful of chopped fresh coriander
- 2-4 eggs (depending on how many serves you make)
- 2 large tablespoons miso
- Pepper
- Chilli (optional)
Fruit and Nut Protein Slice with Walnut Coconut Crunch

Today is a busy day for me in the kitchen
- Crumble:
- 1/2 cup almond meal,
- 1/2 cup coconut sugar
- 1/2 cup pitted dates – chopped
- 1/2 cup dried figs – chopped
- 1/2 cup sultanas or raisins
- 1/2 cup dried cranberries
- 1/2 cup dried organic apricots – chopped
- 1/2 cup walnuts – crushed
- 1/2 cup almonds – diced or lightly blended into chunks
- 1/2 cup pepitas
- 1/2 cup coconut flakes
- 1/2 cup quinoa flakes (for grain free) or rolled oats
- 2 scoops Protein powder (I used vanilla pea protein)
- 2 tbs cinnamon
- 1 tsp baking powder
- 1 tsp vanilla powder
- Zest from 1/2 organic lemon
- 2 free range eggs or 1 tbs ground chia or flax with 3 tbs water - soak for one hour before using or 1 ripe banana for a vegan option

- 1/2 cup coconut milk
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/2 cup walnuts
- 1/2 cup coconut flakes

- 1 tsp. vanilla paste
- 4 tbs coconut oil

- 1/2 cup coconut milk
- 1 tbs coconut yoghurt or more milk
- 1/2 tsp. apple cider vinegar

- 1/4 cup melted raw cacao butter or coconut oil if you don’t have cacao
- 1/2 cup raw cacao powder
- 3 tbs coconut milk
- 2 tbs agave or honey

- 1/3 up raw cacao nibs or raw cacao beans ground into nibs

- 1 tbs raw carob powder
- 1 tsp vanilla paste or powder
- 2 tbs coconut oil – melted
- 2 tbs honey, dark agave, maple syrup or rice syrup
- 1 tbs water
