Vanilla Protein Cookies ‘n’ Cream

Makes: Approx. 6 Add all ingredients to a high speed blender or food processor and blend until soft and fudgy
- Cookies:
- 3/4 cup almonds
- 3/4 cup pitted dates
- 1/2 cup dried coconut
- 1 scoop vanilla protein powder (I used raw pea protein)
- 1 tsp. vanilla paste or powder
- Filling:
- 1/2 cup raw cashews soaked
- 1/3 cup coconut cream (refrigerate a can of coconut cream overnight and use the thick cream not the thin water)
- 2 tbs honey, agave, maple syrup or 1/3 cup coconut sugar
- 1-2 tsp. vanilla paste or powder

- 1/2 cup pepitas (pumpkin seed kernels)
- 1 tsp mesquite (optional)
- 1/2 tsp each of ground cinnamon and vanilla powder or paste
- 1/2 cup coconut sugar
- 1/3 cup honey, agave or maple syrup (don’t use honey for vegan)
- 1/3 cup coconut oil

- 1/2 cup hazelnuts

- 1/2 cup pitted dates

- 1 1/2 tbs raw cacao powder
- 1/2 teaspoon vanilla powder or paste
- CHOCOLATE CREAM:
- 100 ml raw cashews, soaked 3 to 4 hours, rinsed and drained
- A little bit less than 50 ml water
- 2 tablespoons agave, maple syrup, coconut syrup or raw honey (honey not vegan)
- 1 tablespoon raw cacao powder
- 1/4 teaspoon vanilla powder or paste
- 1 tablespoon melted coconut oil
