Wilted Spinach Salad with Warm Bacon

Place eggs in medium saucepan, cover with 1 inch of water, and bring to boil over high heat
- 3 lrg Eggs
- 6 ounce Baby spinach
- 3 tbs Cider vinegar
- 1 tsp Splenda
- 1/4 tsp Black pepper
- pinch Salt
- 8 slices Thick-cut bacon cut into 1/2" pieces
- 1/2 medium Red onion chopped medium
- 1 clove Garlic minced
Baked Stuffed Bell Peppers

You can cook the rice to have a head start
- 3 bell pepper
- 1 small onion diced
- 1 tbs olive oil
- 3 - 4 garlic cloves minced
- 1 cup rice (used basmati rice for a fluffier filling)
- 10 oz ground turkey
- 16 can diced tomatoes
- 6 can tomato sauce
- 0.5 cup grated jack cheese
- 1 salt/pepper to taste

- 1/2 teaspoon minced garlic

- 2 teaspoons minced fresh cilantro divided
- 2 teaspoons minced scallions divided
- 2 1/3 tablespoons low-sodium soy sauce divided
- 1/2 cup uncooked cornmeal
- 2 servings cooking spray (5 one-second sprays per serving)
- 1/2 teaspoon Splenda No Calorie Sweetener
