Pre-cook the rice and set aside
- 1 C cooked white rice
- 4 to 5 green onions, chopped (including greens)
- 3/4 C cooked ham, cubed small
- 3 eggs
- 1/4 C frozen peas
- Salt and pepper to taste
- MSG to taste (optional)
- 1/4 C to 1/2 C Soy Sauce
- Dash of teriyaki sauce
Spinach-Stuffed Chicken Breasts

Preheat oven to 350 degrees
- 3/4 cup frozen choppen spinach thawed, drained
- 1/4 cup low-fat ricotta cheese - (2 oz)
- 1/2 cup shredded part-skim mozzarella cheese (2 oz)
- 2 teaspoons chopped fresh tarragon (or 1/4 tspn dried tarragon)
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 4 chicken breast halves - (1 3/4 lbs)
- 2 teaspoons olive oil
Bourbon Teriyaki Chicken

Combine teriyaki baste&glaze, whiskey, pepper and cinnamon; set aside
- 3/4 cup Kikkoman Teriyaki Baste & Glaze
- 2 tablespoons bourbon whiskey
- 3/4 teaspoon freshly-ground black pepper
- 1/8 teaspoon ground cinnamon
- 1 medium eggplant
- 3 pounds frying chicken pieces

In a large, deep skillet, heat 1 1/2 inches vegetable oil over medium-high heat
- SERVING SUGGESTION:
- Vegetable oil for frying
- 4 pieces boneless skinless chicken - (6 to 8 oz ea) (or 4 [6-oz] thin-cut chicken cutlets)
- 2 tablespoons chopped fresh chives - (abt 10 blades)
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh dill finely chopped
- 1 garlic clove finely chopped
- 6 tablespoons chilled butter
- 1 cup flour
- 2 eggs
- 1 cup plain bread crumbs
- 1 lemon wedge
- Coarse salt to taste
- Freshly-ground black pepper to taste
- Plain round toothpicks as needed

Grilled asparagus with lemon and chive dressing

1. For the asparagus, bring a pan of salted water to the boil
- For the asparagus
- 24 asparagus spears, hard stalks removed
- bowl iced water
- olive oil
- For the lemon and chive dressing
- 1 lemon, juice only
- 3-4 tbsp olive oil, or to taste
- 1 shallot, finely chopped
- small handful fresh chives, chopped
- salt and freshly ground black pepper

Prepare Thai sauce: Place all ingredients except crushed red pepper in blender and blend well
- THAI SAUCE:
- 1/2 cup Thai sauce (see below)
- 1 teaspoon butter more or less
