Indian Tikka Chicken

In shallow bowl combine yogurt, ginger, cilantro, chili powder, coriander and mint and mix well
- 3/4 cup whole milk yogurt
- 1 tablespoon minced fresh gingerroot
- 1 tablespoon chopped cilantro plus additional
- for garnish
- 2 teaspoons chili powder
- 1 teaspoon ground coriander
- 1 teaspoon dried mint
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 1/2 pounds boneless skinless chicken breasts cut 1" cubes
- Lime wedges for garnish
North African Spiced Carrots

Heat oil in a large nonstick skillet over medium heat
- 1 tbs extra-virgin olive oil
- 4 cloves garlic, minced
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 3 cups sliced carrots (4 medium-large)
- 1 cup water
- 3 tbs lemon juice
- 1/8 tsp salt, or to taste
- 1/4 cup chopped fresh parsley
Crab Cakes with Roasted Red Pepper Sauce

This is based on a Jeff Smith recipe
- Crab Cakes:
- 2 large eggs
- 2 tbls freshly chopped parsley
- 1 tsp dry mustard
- 1 tsp Worcestershire sauce
- 2 tbls mayonnaise
- 1 tsp fresh lemon juice
- Old Bay Seasoning to taste
- Salt and pepper to taste
- 1 lb cooked crab meat, flaked
- 1/2 cup fresh breadcrumbs, more as needed
- Panko breads crumbs for dredging
- Half butter and oil for frying
- Lemon wedges
- Roasted Red Pepper Sauce with Capers and Dill:
- 2 large roasted red bell peppers, roasted and peeled
- 1 tbls fresh dill
- 1 tbls fresh parsley
- 1 tbls drained capers
- 2 tbls sour cream (can use reduced fat)
- 2 tbls mayonnaise (can use light or canola)
- Salt and pepper to taste
Spanish Rice

In a large saucepan, fry bacon until crispy
- 1/2 lb bacon, cut up in bite-size pieces
- 1 onion chopped
- 1 cup rice
- 1 can diced tomatoes (Kuner's or Ro-Tel flavored are best)
- 1/2 cup water
- 2 tsp salt
- 1 tsp cumin
- 2 tsp garlic
- 1 tsp chili powder

- 1 fresh jalapeno chile, stemmed, seeded and finely chopped
- 1/2 white onion, diced
- 1/4 cup coarsely chopped fresh cilantro

- Freshly ground black pepper
- 1 ripe tomato, seeded and diced

- 4 large ripe tomatoes, peeled and coarsely chopped
- 1/2 cup finely chopped scallions
- 1 medium clove garlic, finely chopped
- 1/4 cup chopped cilantro (coriander)
- 1 jalapeno pepper or more, to taste, trimmed, seeded, ribs removed, and finely chopped
- 1 tsp dried oregano
- Juice of 1/2 lime
Kung Pao Chicken

Quick Asian stir-fries make especially satisfying weeknight dinners
- 1 1/3 lbs boneless, skinless chicken breasts (about 4), cut into 1/2-inch pieces
- 5 tbls soy sauce
- 2 tbls sherry
- 1 tbls plus 2 teaspoons cornstarch
- 2 tsp sugar
- 2 tbls white wine vinegar or rice vinegar
- 2 tsp Asian sesame oil
- 1/3 cup water
- 2 tbls cooking oil
- 1/2 cup peanuts
- 4 scallions, white bulbs and green tops cut separately into 1/2-inch pieces
- 1/4 tsp dried red pepper flakes
