Hummingbird Cake

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups sugar
- 1 teaspoon ground cinnamon
- 3 large eggs, beaten
- 1 cup vegetable oil
- 1 1/2 teaspoons vanilla extract
- 1 (8-ounce) can crushed pineapple, undrained
- 1 cup chopped pecans

Green Chile Calabacitas (Squash) Enchiladas

The Sauce I kind of just winged this enchilada sauce, but it turned out to be really tasty
- Green Chile Sauce:
- 3-4 poblano peppers
- 3-4 Hatch peppers or other spicy green chile
- 5 large tomatillos
- 4 cloves garlic
- 2 tablespoons cilantro
- 2 cups vegetable broth
- 1 tablespoon cornstarch + 1 tablespoon water
- 1 tablespoon honey
- Dash of balsamic vinegar
- Salt and pepper
- Filling:
- 2 medium squash, sliced
- 2 medium zucchini, sliced
- 1 1/2 cups Cotija cheese, crumbled
- 1 tablespoon chili powder
- 2 tablespoons olive oil
- Salt and pepper
- 12 medium corn tortillas
- Vegetable oil
- 8-10 ounces pepper jack cheese, grated
Green Chile Chicken Pasta

Add cooking oil to 2 quart stock and add diced red onions, garlic Saute onions and garlic at low heat for 2 minute
- 1/2 cup 1/4" DICED RED ONIONS
- 1 cup CHARDONNAY WHITE WINE
- 1 litre HEAVY WHIPPING CREAM
- 1/2 cup PARMESAN CHEESE
- 1/4 cup GARLIC (FRESH CLOVES)
- 1 16 oz JAR ROASTED GREEN CHILE
- 1 tbsp CHICKEN BASE
- 1/4 cup CORN STARCH
- 1/8 tsp WHITE PEPPER
- 1/8 tsp NUTMEG
- 1 cup (SEA) SALT
- 1/2 cup WATER
- COOKING OIL
Juicy Lime Pecan Chicken Recipe

Note: Once coated, this chicken should be refrigerated for 2 hours or more
- Ingredients
- 1/2 1/2 1/2 cup flour
- 1/2 1/2 1/2 tsp kosher salt
- 1/4 1/4 1/4 tsp freshly ground black pepper

- 1/4 1/4 1/4 cup melted margarine

Slow Cooker Chicken Enchilada Soup

Like a lot of my Tex-mex soups this is delicious as is but made even better with toppings
- All the flavors of my favorite enchiladas brought to life in a delicious slow-cooker soup! With shredded chicken, corn, cheddar cheese and sour cream in a spicy, creamy, green chile and tomato infused broth.
- I take one extra step that some people might skip and that is to sauté the onion, bell pepper and garlic stove top before adding them in. This adds a depth of flavor that I would miss.
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 1 small green or red bell pepper, diced
- 3 cloves garlic, minced
- coarse salt and fresh black pepper
- 1 can (11 ounce) Ro-tel diced tomatoes & green chiles
- 4 cups low-sodium chicken broth
- 1 + 1/4 pounds boneless chicken breasts
- 2 cups corn
- 1 can black beans, optional
- 1 tablespoon chili powder like McCormick
- 1 teaspoon ground cumin
- 1/2 teaspoon oregano (preferably Mexican), crushed between fingertips
- 1 + 1/2 cups shredded sharp cheddar cheese or monterey jack, plus more for serving
- 1 cup sour cream, plus more for serving
- tortilla chips, for serving

- 1 lb ground beef
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 (8 ounce) cans tomato sauce
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded monterey jack cheese
Southern Fried Mustard Ranch Pork Chops

In small bowl, stir marinade ingredients well
- For Marinade:
- 2 large thick-cut pork loin chops
- oil for frying
- 2 Tbl. butter
- 1/3 cup heavy mayo
- 2 Tbl. prepared Ranch salad dressing
- 1 1/2 tsp. regular table mustard
- For Breading:
- 1/2 cup Italian seasoned dry breadcrumbs
- 1 Tbl. Kraft Parmesan Cheese

- 1 roasted deli chicken, breast meat shredded
- 3/4 cup shredded cheddar or Monterrey Jack cheese

- 1/2 cup sour cream

- 1 lime, juiced
