- 2 cups sifted cake flour
- 1/2 cup plus 1 tablespoon sugar

Milanese-Style Risotto with Pumpkin

Welcome fall with this delicious pumpkin risotto, flavored with a hint of saffron
- 1 small cooking pumpkin or 1 medium-large butternut squash
- 2 tablespoons extra virgin olive oil (EVOO), plus more for dressing the pumpkin, divided
- Salt and pepper
- Freshly grated nutmeg
- 1/3 cup pumpkin seeds (a generous handful)
- 3 tablespoons pine nuts or shelled, chopped pistachio nuts
- 4 cups chicken stock (32 ounces)
- A generous pinch of saffron threads (about 25 threads)
- 2 cups water
- 2-3 large cloves garlic, very finely chopped
- 1 small yellow onion, very finely chopped
- 1 1/2 cups arborio rice
- 1/2 cup dry white wine
- 2 tablespoons butter, cut into small pieces
- 1/2 cup grated Parmigiano Reggiano cheese (a couple of handfuls), plus some to pass at table
- 1/4 cup flat leaf parsley (a handful), finely chopped

- Nutmeg Streusel Topping:
- 2-1/4 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground nutmeg
- 2 eggs, lightly beaten
- 1 cup dairy eggnog
- 1/2 cup butter, melted and cooled
- 1 teaspoon vanilla
- 1/2 teaspoon rum extract
- 1/3 cup all-purpose flour
- 1/3 cup sugar
- 1/2 teaspoon ground nutmeg.
Ruby Red Grapefruit Margarita

Use the wedge of grapefruit to rub the rims of 6 margarita glasses with grapefruit juice
- 1 wedge ruby red grapefruit
- Coarse kosher salt
- 6 ounces tequila
- 1/3 cup ruby red vodka
- 1/4 cup simple syrup
- 1 cup ruby red grapefruit juice, freshly squeezed or from a carton
- 1/4 freshly squeezed lime juice
- 4 cups ice cubes
- 2 crosswise slices ruby red grapefruit, cut into quarters
BBQ Chicken Pizza

Preheat oven to 450°. Place crust on a baking sheet
- 1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli)
- 3/4 cup tomato chutney
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
- 2/3 cup diced plum tomato
- 3/4 cup (3 ounces) shredded extra-sharp white cheddar cheese
- 1/3 cup chopped green onions

- 1 tablespoon plus 3/4 cup butter, divided
- 3 cups sugar
- 1 can (5 ounces) evaporated milk
- 2 cups (12 ounces) semisweet chocolate chips
- 1/2 teaspoon peppermint extract
- 1 jar (7 ounces) marshmallow creme
