SAMANTHA CHOCOLATE CUPCAKES

Samantha Cupcake: Chocolate cake with chocolate frosting is decadent and indulgent, just like Samantha
- Cake:
- 1/4 c butter, softened
- 4 oz unsweetened chocolate, chopped
- 2 eggs
- 2 c sugar
- 1/2 c water
- 1/2 c brewed coffee
- 3/4 c sour cream
- 1 tsp vanilla extract
- 2 c all-purpose flour
- 1 tsp baking soda
- Frosting:
- 1/2 cup butter, cubed
- 4 ounces unsweetened chocolate, chopped
- 4 cups powdered sugar
- 1/2 cup sour cream
- 2 teaspoons vanilla extract
The Best Meatballs

HEAT oven to 400ºF. LINE 2 (15x10x1-inch) pans with foil; spray with cooking spray
- 2 lb. ground beef
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 1-1/4 cups water
- 2 eggs
Slow-Cooker Lasagna

BROWN meat in large skillet; drain
- 1 lb. ground beef
- 1 jar (24 oz.) spaghetti sauce
- 1 cup water
- 1 container (15 oz.) POLLY-O Original Ricotta Cheese
- 1 pkg. (7 oz.) KRAFT 2% Milk Shredded Mozzarella Cheese, divided
- 1/4 cup KRAFT Grated Parmesan Cheese, divided
- 1 egg
- 2 Tbsp. chopped fresh parsley
- 6 lasagna noodles, uncooked
CANNED BREAD

This recipe is actually made from a number 2 can that has been washed and greased
- Mix together:
- 1-1/2 cups raisins
- 2-tablespoon butter
- 1 cup boiling water
- Then mix together the following:
- 1-cup sugar
- 1 egg
- 1-teaspoon vanilla
- Pinch of salt
- 2 cups flour
- 1-teaspoon soda
- Nuts optional
DATE SWIRL COOKIES

In a saucepan, combine filing ingredients
- FILLING:
- 2 cups chopped dates
- 1 cup water
- 1 cup sugar
- 1 cup chopped nuts
- 2 teaspoons lemon juice
- DOUGH:
- 1 cup butter
- 1 cup packed brown sugar
- 1 cup sugar
- 3 eggs
- 1 teaspoon lemon extract
- 4 cups flour
- 1 teaspoon salt
- 3/4 cup baking soda
ROASTED CORN AND PEPPER SOUP

This is a great recipe when the garden is overflowing
- 4 ears yellow corn, shucked
- 3 bell peppers, (red, orange or yellow) OR 1 jar roasted peppers packed in water
- 5 Roma tomatoes, peeled, de-seeded and chopped OR 1-1/2 cups of diced tomatoes, drained
- 1 Tbsp. olive oil
- 1 large white or yellow onion, finely diced
- pinch red pepper
- 1/4 teaspoon cumin, ground
- 1/2 tsp. dried thyme
- 1/4 tsp. black pepper
- 16 oz. chicken broth, low sodium
- 1 Tbsp. chives, chopped (optional)
MEXICAN CORN SALAD

In a large salad bowl combine corn, cucumber, onion, pepper, tomato, and cilantro (if used)
- 1 15-ounce can corn, drained
- 1 large cucumber, peeled and diced
- 1/2 cup fine-chopped red onion
- 1 medium-size red bell pepper, diced fine
- 1 medium-size tomato, seeded and diced
- 1/2 cup chopped fresh cilantro (optional)
- 2 tablespoons seasoned rice vinegar
- 2 tablespoons apple cider or distilled vinegar
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper
FROSTED GINGER CREAMS

Very good old fashioned cookie
- FROSTING:
- 1/4 cup shortening
- 1/2 cup sugar
- 1 egg
- 1/3 cup molasses
- 2 cups flour
- 1 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/3 cup water
- 1-1/2 ounces cream cheese, softened
- 3 tablespoons butter, softened
- 1 cup plus 3 tablespoons powder sugar
- 1/2 teaspoon vanilla
- 1 to 2 teaspoons lemon juice

- VINAIGRETTE:
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/4 inch thick
- 1 red bell pepper, large-diced
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, sliced in half-rounds
- 1/2 pound feta cheese, 1/2 inch diced (not crumbled)
- 1/2 cup calamata olives, pitted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup good red wine vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup good olive oil

You can make these scones all year long by freezing pumpkin purée in measured portions
- 2 1/2 About 2 1/2 cups all-purpose flour
- 1/4 cup firmly packed brown sugar
- 1 tablespoon baking powder
- 3/4 teaspoon ground cinnamon

- 1/2 About 1/2 cup (1/4 lb.) butter or margarine, cut into chunks
