- 1 . 3 tablespoons extra-virgin olive oil
- 2 . 1 onion, coarsely chopped
- 3 . 2 celery ribs, thickly sliced
- 4 . 4 carrots, thickly sliced
- 5 . 6 garlic cloves—4 smashed, 2 minced
- 6 . Two 2-pound cooked lobsters—shells reserved, meat cut into 1-inch pieces
- 7 . 1 cup dry white wine
- 8 . 3 thyme sprigs
- 9 . 1 bay leaf
- 10 . 6 black peppercorns
- 11 . 5 coriander seeds
- 12 . 1/8 teaspoon fennel seeds
- 13 . 2 quarts water
- 14 . 2 medium Yukon gold potatoes, peeled and cut into 2-inch chunks
- 15 . 1 fennel bulb—halved, cored and thinly sliced
- 16 . Pinch of saffron threads, crumbled
- 17 . Two 2-inch strips of orange zest
- 18 . One 28-ounce can diced tomatoes, drained
- 19 . Salt and freshly ground black pepper
- 20 . 2 pounds mussels, scrubbed
- 21 . 1 pound skinless halibut fillet, cut into 2-inch chunks
