- 1 cup blueberries
- 3/4 cup oat milk

- 1 tsp cider vinegar
- 1/4 cup agave
- 1/3 cup oil
Black Bean Chili with Chocolate and Coconut

Heat oil in a large stockpot over medium-high heat
- 1 Tbsp. olive oil
- 1 large white onion, chopped
- 6 cloves garlic, minced
- 1/4 cup good-quality chili powder
- 1 tablespoon cumin
- 8 cups water
- 1 pound dried black beans, rinsed
- 1 (4 oz.) can diced green chiles
- 1/4 cup coconut flakes
- 2 Tbsp. unsweetened cocoa powder (use dark chocolate cocoa for vegan version)
- 2 teaspoons dried oregano
- 1-3 teaspoons minced canned chipotle chiles in adobo, to taste
- toppings: chocolate chips and additional toasted coconut flakes

- 6 medium carrots (2 cups shredded)
- 2 cups quinoa, cooked
- 1 avocado
- 1 pear
- 2 Tbsp sesame seeds
- 1/4 cup olive oil
- 1/2 cup cilantro, packed
- 2 limes, juiced (1/4 cup)
- 1 tsp ginger root, grated
- 1 Tbsp coconut or pure maple syrup
- 1/4 tsp sea salt

- 1/4 cup water
- 3 tablespoons extra virgin olive oil
- 4 large yellow onions, halved lengthwise and thinly sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large or 2 small bunches Swiss chard or lacinato (a.k.a. dinosaur) kale, center stems removed, leaves chopped
- 1 tablespoon balsamic vinegar
- 1 3/4 c. chickpea (garbanzo bean) flour
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme

In a food processor or high speed blender add all ingredients and blend until smooth
- 1 can (15 oz) black beans, drained and rinsed
- 1 garlic clove, pressed
- 1 tablespoon olive oil
- 1/2 – 1 tablespoon fresh lime juice
- 2 tablespoons water
- 1/2 teaspoon smoked paprika, chipotle
- 1 tablespoon onion
- 1/4 teaspoon cumin
- salt to taste
