Banana Bread from Cake Mix

Mix up the batter for this classic bread in just fifteen minutes
- Banana Bread (Basic Recipe):
- 1 box Betty Crocker™ cake mix (choose cake mix flavor from recipe variations below)
- 1/3 cup oil
- 3 eggs
- cups mashed bananas (3 to 4 mChocolate-Chocolate Chip Banana Bread:
- Chocolate cake mix:
- 1 bag (12 oz) semisweet chocolate chips (2 cups)

- Chocolate Chip-Banana Bread:
- Yellow cake mix
- 1 bag (12 oz) semisweet chocolate chips (2 cups)

- Banana Split Bread:
- Cherry chip cake mix
- 1 jar (6 oz) maraschino cherries, each cut in half
- 1/2 cup chopped almonds
- Serve slices of bread with a drizzle of hot fudge sauce and a dollop of whipped cream.
- Banana-Butterscotch Bread:
- Butter pecan cake mix
- 1 bag (12 oz) butterscotch chips (2 cups)

- White cake mix
- 2 tablespoons cinnamon-sugar
- Before baking, sprinkle cinnamon-sugar over batter in pans.

Penne and Green Beans with Tomato-Tarragon Sauce

Bring a large pot of water to a boil for the pasta
- 1/4 cup extra virgin olive oil (EVOO)
- 4 cloves garlic, very thinly sliced
- 1 small red chili pepper, very thinly sliced
- 2 pints ripe cherry or grape tomatoes
- Salt and pepper
- 1/2 cup dry, crisp white wine
- 1/4-1/3 cup tarragon leaves, chopped (several sprigs)
- 1 pound penne rigate
- 1/2 pound green beans or haricots verts, trimmed and cut into thirds on an angle
- Vegan parm for grating or 1/2 pound ricotta salata cheese, for grating
- Chili pepper adds zing to this tri-colored bean and tomato vegetarian-friendly pasta dish

- 1 pound boneless skinless chicken breasts (about 2 breasts)
- 2 cloves garlic, minced
- 1 (2-inch) piece peeled fresh ginger, cut into thin matchsticks
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon cornstarch plus 1 teaspoon
- 1 1/4 teaspoons kosher salt
- 1 tablespoon dry sherry
- 3/4 cup chicken broth, low-sodium canned, or homemade or water
- 2 tablespoons vegetable oil
- 2 bunches medium asparagus (about 2 pounds), woody stems trimmed, sliced into 1-inch pieces
- 1 bunch scallions (white and green parts), thinly sliced
