Tropical Island Chicken

Combine all of the ingredients minus the chicken in a glass bowl mixing well
- 4 boneless, skinless, chicken breasts
- 1 Tbl garlic, minced
- 1/2 cup pineapple juice
- 1/2 cup orange juice
- 1 tsp kosher salt
- 1/4-1/2 cup really good tequila (and 2 shots for you while you cook!)
- 1 tsp fresh ground black pepper
- 1 tsp chili powder
- 1/2 tsp cumin
- 4 shakes of hot sauce (Tabasco)
- 1 Tbl brown sugar
- 1 Tbl fresh cilantro, chopped
- 2 Tbl olive oil

Pretzel Dough Directions: Place hot water and sugar in a small bowl
- Pretzel Dough Ingredients:
- 2 cups hot water
- 1 tablespoon sugar
- 1 envelope active dry yeast
- 5 cups all-purpose flour
- 1 tablespoon salt
- non-stick cooking spray
- 2 tablespoons baking soda
- 1 egg, beaten
- Topping Options: coarse Kosher salt, crushed graham cracker crumbs, cinnamon-sugar,
- vanilla icing and toasted almond slices
- Filling Options: Cream Cheese Filling (recipe below)
- Dipping Options: mustard or cheese sauce
- Cream Cheese Filling Ingredients (optional):
- 8 ounces cream cheese, softened to room temperature

Irish Lemon Pudding Tart

A simple tart crust filled with a traditional fluffy and delicious Irish lemon pudding
- For the Crust:
- 1/2 cup unsalted butter
- 1 1/4 cups all purpose flour
- 3 tablespoons granulated sugar
- 1/4 teaspoon table salt
- For the Irish Lemon Pudding:
- 2 tablespoons unsalted butter, softened
- 1/4 cup granulated sugar
- 2 eggs, whites and yolks divided
- 2 large lemons, zested and juiced (about 4 tablespoon lemon juice)
- 1/2 cup all purpose flour
- 1 1/4 cups milk
- Whipped cream and sprinkles to top
Vanilla Pudding Sauce

Mix cornstarch, sugar, and salt in a saucepan
- 2 Tbsp cornstarch
- 1/3 cup sugar
- 1/8 tsp salt
- 2 cups milk
- 2 egg yolks, beaten
- 1 Tbsp butter
- 2 tsp vanilla

- 2/3 cup chopped cranberries
- 4 tsps. + 1/2 cup granulated sugar
