Chicken Pot Pie - Mimi's Cafe Copycat

Preheat oven to 400 degrees
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 2 cups white mushrooms, sliced
- 1 cup carrots, diced
- 1 cup celery, diced
- 2 cups cooked chicken, diced
- 3 cups gravy
- 1 teaspoon fresh thyme, chopped
- 1/4 cup frozen green peas, thawed
- 1 tablespoon Italian parsley, chopped
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 egg beaten to blend with 1 tablespoon of water (egg wash)
- 1 (9 inch) ready made pie crust
Strawberry Donuts - Baked (muffin pan friendly)

Heat oven to 350° F. Lightly grease a nonstick donut pan, mini muffin or regular muffin pan
- 1 + 1/4 cups (5 oz.) all-purpose flour, sifted (measure first, then sift)
- 3/4 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2/3 cup canola oil, plus more for greasing
- 1/2 cup buttermilk
- 1 egg
- 1/2 teaspoon white vinegar
- 1/2 teaspoon vanilla extract
- 1 cup finely chopped strawberries
- 2 cups confectioners' sugar
- 1 - 2 tablespoons milk
- Sprinkles, for decorating, optional
Soda Pop Ice Cream

Mix all ingredients together and pour into 2 qt
- Any soda of your choice will do.
- 4 C cold soda pop, any flavor
- 1 14 oz. can sweetened condensed milk
- 1 C whole milk

- 1 ripe mango, cut into chunks
- 1 orange
- 1/2 banana, sliced
- 1/2 cup fresh pineapple, cut into chunks
- 1/4 cup coconut milk
- 1 Tbsp honey
Christmas Comfort Simmering Potpourri

- 3 cups of water
- 4 T Vanilla (you don't have to use your good stuff)
- 3 T Cinnamon
- 2-3 Cinnamon Sticks

- 4 cups water
- 2 tsp chicken bouillon
- 1 cup long grain rice
- 1/2 cup dry kidney beans
- 1/4 cup dehydrated red and green bell peppers
- 1/4 cup freeze dried onions
- 1/4 cup chopped carrots
- 1 tsp turmeric
- 1 tsp dry mustard
- 1/8 tsp cayenne pepper
- 1/2 cup chopped pineapple

- 2 tsp pumpkin spice

Roasted Beets and Carrots

Heat oven to 425°F. Wrap beets individually in foil; place in shallow pan
- Make Ahead:
- 44 fresh beets, trimmed
- 66 carrots, peeled, cut diagonally into 3/4-inch-thick slices

- 2tsp.2 tsp. ground ginger
