- 2 2 2 small lemons, cut into thin rounds
- 1 1/2 1 1/2 1/2 tsp sugar
- 4 4 4 garlic cloves, minced
- 4 4 to 3/4-inch (6 oz) chicken breast halves, pounded to 3/4-inch thickness
- 1/2 1/2 1/2 tsp kosher salt
- 1/2 1/2 1/2 tsp freshly ground black pepper
- 1 1 1 T olive oil, divided
- 2 2 2 T unsalted butter, divided
- 1/2 1/2 1/2 tsp grated garlic
- 1 1 1 oregano sprig
- 1 1 1 thyme sprig
- 1/2 1/2 1/2 cup white wine
- 1 1 1 cup unsalted chicken stock
- 1 1 1 tsp all-purpose-flour
- 1 1 1 T capers rinsed and drained
- 2 2 2 T chopped flat-leaf parsley
Chicken in Mustard Sauce

Season chicken with salt and pepper
- 4 boneless skinless chicken breasts (6 ounces each), pounded to 1/2-inch thick
- Salt and pepper
- 2 tablespoons olive oil
- 1 medium shallots, minced (1/4 cup)
- 1/4 cup dry white wine, such as Pinot Grigio
- 1/2 cup chicken broth
- 2 tablespoons Dijon mustard
- 3 tablespoons heavy cream
- 2 tablespoons parsely, finely chopped
Salmon with Wasabi & Baby Bok Choy

In a blender, combine mayonnaise, cilantro, lime juice, wasabi, ginger, and 1 tablespoon water
- 1/2 cup light mayonnaise
- 1/4 cup fresh cilantro leaves
- 3 tablespoons fresh lime juice (from 2 limes)
- 2 to 3 teaspoons wasabi paste
- 1 piece (1 1/2 inches long) fresh ginger, peeled and finely chopped
- Coarse salt and ground pepper
- 1 tablespoon vegetable oil
- 4 skinless salmon fillets, (6 to 8 ounces each)
- 1/2 cup mirin
- 1 tablespoon soy sauce
- 4 heads baby bok choy (1 1/4 pounds total), halved lengthwise
Green Rice

Good with Chicken with Lime & Mango Salsa
- 4 oz bulk spinach (2 cups)
- 1/2 cup fresh chopped cilantro
- 1 garlic clove
- 1 fresh chili pepper (jalapeno or serrano) with seeds and stem removed
- 3/4 cup vegetable oil
- 2 1/2 cups long grain white rice
- 3/2 cups corn kernals
- 1 cup thinly cut spinach
Mango Salsa

In a small bowl, combine the mango, parsley, onion, lime juice, oil, salt and cumin
- 2 cups fresh diced mango
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped red onion
- 1 tsp lime juice
- 1 tsp vegetable oil
- 1 tsp salt
- 1/4 tsp cumin seed
Turkey Chili with White Beans

Heat oil in large stewing pot and add turkey meat to brown
- 1 1 1 olive oil
- 2 2 2 medium onions, chopped (I buy it ready chopped)
- 2 2 2 garlic cloves - minced
- 1/1 1/1/2 1/1/2 tsp dried oregano (I use more)
- 1 1/2 1 1/2 1/2 tsp ground cumin (I use more)
- 2 2 2 lbs ground turkey
- 2 2 2 bay leaves
- 3 3 to T chili powder ( or to taste)
- 1 1 1 jalapeno pepper, seeded and minced
- 1 1 1 sweet red bell pepper - chopped
- 2 2 2 cans of roasted diced tomatoes
- 2 2 2 cans canelli beans
- 2 2 to cups of chicken stock or to just cover chili
- to Mexican Three cheese to top chili
- to and pepper to taste
- Optional: dollop of sour cream or Greek plain yogurt
Stuffed Cabbage Rolls w/Tomato Sauce

Combine all ingredients in a bowl and stir well until brown sugar dissolves
- 1 1 16oz 1/2 2 1/2 2 can tomato puree - coarsely chopped, 1/2 c chopped onions, 2 large minced garlic cloves, 1/2 tsp salt, 2 T brown sugar
- 1/2 1/2 1-2 1/2 1/4 1 c rice (uncooked), 1-2 slices bacon - minced, 1/2 c minced onion, 1/4 tsp thyme, 1 egg, salt and pepper
Oriental Turkey Meatball Soup

Bring broth to a boil, add turkey meatballs, celery, ginger, soy sauce and chili oil
- 6 cups chicken broth
- 1 lb ground turkey, rolled into 1-inch balls
- 2 celery stalks, finely chopped
- 5 slices fresh ginger, peeled
- 2 T soy sauce
- 1/2 tsp hot chili oil
- 2 heads baby bok choy, chopped
Manhattan Clam Chowder

- 1 pint shucked clams or two 6 1/2 oz cans of minced clams
- 4 slices cooked bacon
- 1 cup chopped onion
- 1 cup chopped celery
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1/2 + chopped carrots
- 2 T chopped shallots
- 1 14 1/2 oz can tomatoes, cut up
- 2 cups finely chopped peeled potatoes
- 1 box of chicken broth (32 oz)
- 1 bottle clam juice if needed
- 1/2 + crushed dried basil
- red pepper to taste
- ground black pepper to taste
- salt to taste
