- 2 lbs beef chuck, trimmed and cut into thin 1/2" thick slices X 3" long.
- 1 large onion, chopped
- 1lb white mushrooms (I use assorted mushrooms)

- 1/2 cup reduced-fat sourcream
- 2T Dijon mustard

- 1 tsp salt
- 1 tsp Italian seasoning
- 1/4 tsp pepper
- 1 1lb ricotta cheese
- 2 cup Mozzarella cheese - grated
- 1/2 cup Parmesan cheese
Lobster Macaroni and Cheese

- 1 lb elbow macaroni
- 6 tablespoons butter
- 1/2 medium onion, finely chopped
- 1 garlic clove, minced
- 1/3 cup all-purpose-flour (spooned and leveled)
- 3 cups milk
- 1/8 tsp nutmeg
- 1 lb coarsely chopped cooked lobster, shrimp, crawfish, or crabmeat, or a combination

- 1/2 bunch fresh basil leaves
- 2 (28oz) cans whole peeled tomatoes - drained and hand crushed
- pinch of sugar, kosher salt, freshly ground pepper
- 4 skinless, boneless chicken breasts (about 1 1/2lbs)
- 1/2 cup flour
- 2 large eggs - lightly beaten
- 1 T water
- 1 cup dried bread crumbs
- 1 (8oz) fresh mozzarella - water drained
- Freshly grated Parmesan
- 1 1lb spaghetti noodles - cooked al dente

In a medium saucepan, bring 4 1/2 cups of water to boil over high heat; season with salt and pepper
- 1 cup coarse grits
- 2 slices bacon, cut crosswise into 1/2" pieces
- l lb large shrimp, peeled and deveined
- 2 T butter
- 1 medium onion - halved and thinly sliced
- 2 cloves garlic - thinly sliced
- 1 can (14.5 oz) diced tomatoes

Pork Chops with Oranges & Parsley

In a large skillet, heat oil over medium-high
- 1 tablespoon vegetable oil
- 4 bone-in pork chops (1 inch thick; about 2 1/2 pounds total)
- Coarse salt and ground pepper
- 2 strips orange zest, plus 1/2 cup orange juice and 2 oranges, peel and pith removed and flesh cut into segments (3 oranges total)
- 1/4 cup fresh parsley leaves, chopped

- Sauce:
- 1/2 cup soy sauce
- 2 T sugar
- 1/4 cup sake
- 1/4 cup mirin
- 1 lb thinly sliced beef
- 3 T sugar
- 2 large Japanese green onions (naga negi) or 1 bunch of scallions cut into 2-inch pieces
- 6 oz yam noodles (shirataki)
- 1 bunch (4-6 stems) chrysanthemum greens, Shungiku
- 6 shiitake mushrooms
- 1 pkg grilled tofu or firm tofu cut into 1-inch pieces
- 1/4 head of Napa cabbage, chopped
