Campbell's Tuna Noodle Casserole

Stir soup, milk, peas, tuna and noodle in a 3-qt casserole
- 2 (10.75 oz) cans Campbell Condensed Cream of Mushroom Soup
- 1 cup milk
- 2 cups frozen peas
- 2 (10 0z) cans tuna, drained
- 4 cups hot cooked med. egg noodles
- 2 T dry bread crumbs
- 1 T butter, melted
Potato & Prosciutto Flatbread (Rachael Ray)

Preheat oven to 500 degrees
- 1 T olive oil
- 1 lb pizza dough
- 1 T Dijon Mustard
- 1 Yukon gold potato, thinkly sliced
- 1 1/2 cups Gruyere cheese, grated
- 4 scallions - white and green parts separated and thinly sliced
- 4 oz. prosciutto, torn
Cioppino (Giada De Laurentiis)

Heat the oil in a very large pot over med heat
- 3T olive oil
- 1 large fennel, thinly sliced
- 1 onion, chopped
- 3 large shallots, chopped
- 2 tsp salt
- 4 large garlic cloves, finely chopped
- 3/4 dried crushed red pepper flakes, plus more to taste
- 1/4 cup tomato paste
- 1 (28 oz) can diced tomatoes in juice
- 1 1/2 cups dry white wine
- 5 cups fish stock
- 1 bay leaf
- 1 sprig of thyme
- 1 lb manila clams, scrubbed
- 1 lb mussels, scrubbed, debearded
- 1 lb uncooked large shrimp, peeled and deveined
- 1 1/2 lbs assorted firm-fleshed fish such as halibut or salmon, cut into 2-inch chunks
Chef John's Red Bean and Rice

Place beans in a large container and cover with several inches of water; let stand 8 hours or overnight
- 1 lb dry red kidney beans (soak over night)
- 1 T veg. oil
- 12 oz andouille sausages - diced, or ground pork.
- 1 cup diced onions
- 3/4 cup diced celery
- 3/4 cup diced poblano chili
- 4 cloves garlic, minced
- 2 qts chicken broth, more if needed.
- 1 smoked ham hock
- 2 bay leaves
- 1 tsp freshly grd pepper
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper, or to taste
- 4 cups cooked white rice
- 2 T chopped green onions, to taste
- Sliced ham steak
- *Hot sauce if desired.

- 6 pieces of white bread
- 6 eggs
- 1/2 to 2/3 cup milk
- 4 T butter
- 1 T cinnamon
- Strawberry syrup for serving
- White powder sugar
Tomato Tart with Bacon and Gruyere

Preheat oven to 400 degrees
- 1 sheet of puff pastry (from a 17.3 oz box), thawed.
- 1 1/2 cups shredded gruyere cheese
- 4 slices cooked bacon, crumbled
- 2 thinly sliced tomatoes
- 2 tsp fresh thyme leaves
- 1/2 tsp kosher salt & freshly grd pepper
- 1 egg
Yellow Squash Casserole

Preheat oven to 350 degrees
- 1 T olive oil
- 3 lbs yellow squash sliced
- 1 white onion, diced
- 8 oz sour cream
- 1 c shredded cheddar cheese
- 1/2 c Parmesan cheese
- 1 large egg
- 1 sleeve Ritz crackers, crushed
- 2 T butter, melted
- 1/4 c grated Parmesan cheese

- 1 can (15oz) Pumpkin puree
- 3/4 cup firmly packed light brown sugar
- 8 oz creme fraiche
- 3 eggs
- 1 tsp grd cinnamon
- 1 tsp gro ginger
- 1/4 tsp grd nutmeg
- 1/4 tsp salt
- 1/8 tsp grd cloves
- chocolate crust (recipe to follow)
- 2 oz best quality semi-sweet chocolate
