Mix the flour, sugar and salt in a large bowl
- 1/2 cup all-purpose flour, sifted
- 2 large eggs
- 1 cup milk
- 1 tablespoon of melted butter
- 1 teaspoon sugar
- 1 pinch salt

In a large bowl, mix together the milk and the oats
- 2 cups Soy Milk
- 1/2 cup quick or old-fashioned rolled oats
- 2 large eggs - lightly beaten
- 1/4 cup packed brown sugar
- 2 Tablespoon canola oil
- 2 teaspoons vanilla extract
- 2/3 cup whole-wheat flour
- 2/3 cup all-purpose flour
- 1/4 cup wheat germ - pan-toasted until it's smells nutty
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Tandoori Tofu & Vegetables

Mix yogurt, lemon juice, garlic, ginger, and spices in a bowl and set aside
- 1/2 cup plain yogurt
- 2 TB lemon juice
- 1 TB garlic, finely minced
- 1 TB ginger, grated
- 1 TB ground cumin
- 1 tsp ground coriander
- 1/2 tsp garam masala
- 1 tsp. roasted chili powder
- 1/4 tsp. ground cardamom
- 1/4 tsp. ground cloves
- 1/4 tsp. black pepper, ground
- 2 tsp. salt
- Assorted firm vegetables (zucchini, carrot, cauliflower, squash, potato, mushrooms, etc.)
- 1 block tofu
- Bamboo skewers, for grilling
- Cilantro, for garnish
Quesadilla - black bean & Pineapple

1. Spray pan with non-stick cooking spray
- 1 flour tortilla
- 1 -2 ounce green chilies, diced
- 1 -2 ounce onion, diced
- 2 ounces pineapple tidbits
- 4 ounces refried black beans (with lime is great)
- 1 tablespoon taco seasoning
- 1 -2 ounce cheddar cheese, shredded
German Pancake (Dutch Baby)

1. Preheat oven to 450 degrees F
- 3 eggs, room temperature
- 1/2 cup milk, room temperature
- 1/2 cup sifted bread flour or all-purpose flour*
- 1/8 teaspoon pure vanilla extract
- 1/8 teaspoon ground cinnamon
- 7 teaspoons butter
- Freshly squeezed lemon juice
- Powdered or confectioners sugar
- *Bread flour is a high-protein flour. The high protein helps the pancake rise. All-purpose flour may be substituted but the results won't be as spectacular.
Roast Potatoes w Herb Butter

Cut the potatoes into 2-inch cubes
- 1 1/2 pounds russet potatoes
- 1 1/2 pounds red potatoes
- 1 1/2 pounds sweet potatoes
- Kosher salt
- 1 tablespoon canola oil
- Freshly ground black pepper
- 1/4 cup unsalted butter, room temperature
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh sage
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme

- 2 lbs dried navy beans
- 4 cups vegetable broth
- 2 cups water
- 2 tablespoons fakin' bakin, crumbles (optional)

- 1 cup ketchup (or fresh Tomatoes)
