Preheat the oven to 400 degrees F
- 8 to 12 slender carrots, peeled and trimmed
- 8 to 12 baby turnips, peeled
- 6 to 8 fingerling potatoes, scrubbed and cut lengthwise in halves
- or 2 large parsnips, peeled, trimmed, and cut diagonally into 1-inch-thick slices
- 1 or 2 medium onions, trimmed, peeled and halved, each 1/2 cut into quarters
- 1 or 2 large beets, peeled and cut into thick wedges
- 1 or 2 kohlrabi bulbs, peeled and cut into thick wedges
- 1 celery root, trimmed and halved, halves cut crosswise into 1-inch-thick slices
- 1 whole head garlic, separated into cloves, unpeeled
- 2 or 3 sprigs fresh rosemary, sage, or thyme
- Salt
- Freshly ground black pepper
- Extra-virgin olive oil

Fill a 6-quart pot halfway full of water, set over high heat and bring to a boil

French Onion Soup (Vegetarian)

Melt the butter in the wok, saucepan, or kettle at medium heat
- 3 tbsp butter or olive oil
- 4 large white onions, thinly-sliced
- 1 tsp salt
- 1/2 tsp dry mustard
- dash of thyme
- 5 cups vegetable stock and/or water
- 2 tbsp soy sauce
- 2 Tbsp dry white wine (optional)
- white pepper
- croutons or stale French bread
- cheese: Gruyère or Swiss, grated or sliced (optional)
Tofu Lettuce Wrap

Heat oil in a large skillet over medium high heat
- 1 to 2 tablespoons coconut oil(or any vegetable oil)*
- 1/2 cup finely chopped yellow onion
- 1/2 cup finely chopped Water Chestnuts
- 1/2 cup finely chopped baby corn
- 1/2 cup chopped carrot
- 1 tbs White wine or Rice Wine.
