Fettucine with Artichokes & Beans

Cook the pasta according to the package directions
- 3/4 pound fettuccine
- 1/4 cup, plus 1 teaspoon olive oil
- 2 cloves garlic
- 1 15.5-ounce can cannellini beans
- 14 ounces artichoke hearts
- kosher salt

- 1 slice Whole wheat bread
- 1 teaspoon oregano
Pesto w Basil

Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped
- 2 cups packed fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 2/3 cup extra-virgin olive oil, divided
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup freshly grated Pecorino cheese (see Cook's Note)
Sweet Potato Hash

1. First, you'll prepare the tofu saute (it's similar to a tofu scramble)
- 1 1/2 cups cooked sweet potato, diced (1 large potato)
- 15 ounces firm tofu
- 1/2 cup shiitake mushrooms, sliced
- 1-2 ounces raw almonds
- 2 Tbsp olive oil
- 2 Tbsp maple syrup
- 2 Tbsp coconut or soy milk
- 1 tsp salt
- 1/4 cup parsley, chopped
- 1/2-1 tsp liquid smoke
- 2 tsp cumin powder
- 1 Tbsp paprika

Spring Rolls With Two Dipping Sauces

Combine all vegetables in a bowl and season with salt and pepper to taste
- GARLIC-SOY DIPPING SAUCE:
- 1 cup shredded Napa cabbage
- 1 cup shredded carrot
- 1/2 cup finely-sliced green onion
- 1 red pepper thinly sliced
- 6 large tree ear Mushrooms, sliced thin
- 2 cups bean sprouts
- 1/2 cup chopped cilantro
- Salt to taste
- Freshly-ground black pepper to taste
- 8 spring roll wrappers, very thin, 8" square
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons peanut oil
- 1 teaspoon hot sesame oil
- 1 teaspoon minced garlic

- SPICY PEANUT DIPPING SAUCE:
- 2 tablespoons finely-chopped garlic
- 1/2 cup smooth peanut butter
- 1/2 cup soy sauce
- 1 teaspoon sugar
- 1 tablespoon rice vinegar
- 1 tablespoon hot chile oil
- 1/2 cup cilantro leaves finely chopped
Chutney - Mango

Cut the mango flesh away from the pit
- 4 pounds fresh mangos, ripe but not too soft, peeled
- 3 tablespoons vegetable oil
- 1 teaspoon chile flakes
- 2 1/2 cups medium dice red onion
- 1/4 cup minced fresh ginger
- 1 cup small dice red bell pepper
- 8 ounces unsweetened pineapple juice
- 4 ounces cider vinegar
- 1/2 cup brown sugar
- 1 1/2 tablespoons curry powder
- Kosher salt and fresh ground white pepper
- 1/2 cup raisins or golden raisins
- 1/2 cup toasted, roughly chopped macadamia nuts
Sesame Noodles (Cold)

Cook the noodles in large pot of boiling unsalted water over medium heat until barely tender and still firm
- 1/2 pound soba noodle and Chinese egg nodle
- 3 tablespoons dark sesame oil
- 2 tablespoons peanut oil
- 2 green onions thinly sliced on
- the diagonal
- 1 piece fresh ginger - (abt 1/2") minced
- 3 garlic cloves minced
- 1 teaspoon red chili paste, optional (such as sambal oelek)
- 2 tablespoons brown sugar(can substitute with Agave or Maple syrup)
- 1/4 cup creamy peanut butter
- 1/2 cup Tahini
- 3 tablespoons rice vinegar(or white wine vinegar)
- 3 tablespoons soy sauce
- 6 tablespoons hot water
- 1 tablespoon toasted sesame seeds
- Cucumber slices for garnish
- Fresh cilantro leaves for garnish
Pineapple(Grilled), Basil, and Cucumber Salad

Heat grill to high. Grill pineapple until grill marks appear, about 2 minutes per side
- 1/2 cored pineapple, cut into 1/3-inch-thick half- or quarter-moons
- 1 small cucumber, halved lengthwise and thinly sliced on the bias
- 1/2 cup basil leaves (torn if large)
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon coarse salt
