Oatmeal Raisin Cookies/Bars, GF

- 1/2 cup butter or non-dairy alternative (e.g. Earth Balance® Buttery Sticks)
- 1/2 cup granulated cane sugar
- 1/2 cup light brown sugar
- 2 eggs
- 2 teaspoons 2 teaspoons pure vanilla extract
- 1 1/4 cup gfJules™ All Purpose Gluten Free Flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 Tablespoon cinnamon
- 1 1/2 cups gfJules™ Certified Gluten-Free Oats
- 1/2 cup baking raisins*
Oma's Green Bean Soup, GF

Instructions: In large pot, heat oil and brown ground beef
- Hints:
- 1 2 1 2 1 - 2 Tbsp oil
- 1 1 1 lb ground beef, lean, see below for other ideas
- 1 1 1 medium onion, chopped
- 2 2 bag 2 lb bag frozen green beans
- 1 2 1 2 1 - 2 Tbsp Vegeta Food Seasoning
- 5 5 5 cups potatoes, cut up, see below for other ideas
- to celery seeds, parsley, or summer savory to taste.
- to Maggi to taste.
- Add freshly ground pepper (I add lots!)
- 1 to to has salt and dried vegetables in it. If you don't have this, just add about 1 tsp salt and some pepper to start. Adjust seasonings to taste.
- to you like soup "brothy", just leave the way it is. However, my family likes it thicker (creamier). The easy way is to slowly add Instant Mashed Potato flakes, stirring constantly, until the soup is the consistency you like.
- to to to thicken the soup is to grate a raw potato into the soup right at the beginning.
- 1 2 to thicken it with 1 - 2 Tbsp cornstarch dissolved in a little cold water. Add to finished soup, slowly, until it's the way you like it.
Melting Moment Cookie, but GF!

Drop cookies or even cut out cookies if you choose
- 1 1/2 cups (210 g) all purpose gluten free flour (I used Better Batter)
- 3/4 teaspoon xanthan gum (omit if your blend already contains it)
- 1/3 cup (48 g) cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 2/3 cup (77 g) confectioners’ sugar
- 12 tablespoons (168 g) unsalted butter, at room temperature
- 1 egg white (25 g), at room temperature
- 1 teaspoon pure vanilla extract
- Lukewarm water by the half-teaspoonful, as necessary
- 4 ounces miniature semi-sweet chocolate chips (optional)
Carrot Casserole

1. Cook carrots in chicken broth
- 2 lb carrot, sliced and cooked in chicken broth
- 2 14 oz. cans cream of chicken soup
- 3/4 cup mayonnaise
- 1 tsp lemon juice
- 1/2 onion, chopped fine
- 1/2 cup cheddar cheese, grated
- 1 8 oz. package stuffing mix
- 1 stick butter

Four-Cheese Macaroni and Cheese

This can be made GF by using GF pasta
- 3 cups uncooked penne pasta
- 1 large egg
- 2 cloves garlic, minced
- 1 1/2 cups 2% low-fat milk
- 1 cup (4 ounces) shredded sharp Cheddar cheese
- 4 ounces cream cheese
- 1 cup (4 ounces) shredded Gruyère or Swiss cheese
- 3/4 cup (3 ounces) grated Parmigiano-Reggiano cheese
- 1/8 teaspoon red pepper flakes
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons butter
- 12 saltine crackers, crumbled
Shepherd's Pie

Shepherd’s pie is one of those classic comfort foods that never disappoints
- Mashed Potatoes:
- 2 tablespoons extra-virgin olive oil
- 1 large onion, peeled and diced
- 1-2 large carrots, peeled and shredded
- 1 large zucchini, chopped
- 1 pound 90% lean ground beef
- 2 tablespoons Basic Gum-Free Gluten-Free Flour (below) or gluten-free all-purpose flour blend of choice
- 1 cup gluten-free chicken stock
- 3 tablespoons tomato paste
- 2 tablespoons gluten-free Worcestershire sauce
- 3 tablespoons chopped fresh parsley or 1 1/2 tablespoons dried parsley
- 2 pounds potatoes (combination red potatoes & sweet potatoes), peeled
- 3 tablespoons unsalted butter or dairy-free margarine
- 1/2 cup milk of choice
- 1/4 teaspoon kosher salt or to taste
