Cheesy Spinach Balls, GF

These spinach balls are a simple old-fashioned appetizer easily made gluten free with ordinary pantry ingredients
- Ingredients
- 1 pound (16 ounces) frozen chopped spinach, thawed and well drained
- 6 tablespoons unsalted butter, melted & cooled slightly
- 3 eggs (150 g), at room temperature
- 6 ounces sharp cheddar cheese, grated
- 3 ounces Parmigiano-Reggiano cheese, shaved or grated
- 2 teaspoons dried oregano
- 1 tablespoon dried parsley
- 2 cups (240 g) coarse gluten free bread crumbs
- 3 tablespoons (27 g) tapioca starch

- For lemon ice cream
- 1 pint superpremium vanilla ice cream
- 1 Tbs finely grated fresh lemon zest
- 1 1/2 Tbs fresh lemon juice
- For galette
- 1 lb fresh blueberries (3 cups)
- 2 Tbs cornstarch
- 1 Tbs finely grated fresh lemon zest
- 1 Tbs fresh lemon juice
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup plus 1 teaspoon sugar
- 1 (9-inch) refrigerated pie dough (from a 15-oz package)
- 1 Tbs cold unsalted butter, cut into pieces
- 1 large egg, lightly beaten
- Garnish: grated lemon zest (optional)
- Servings: 6
- Yield: Makes 6 servings

- 2/3 cup dried cranberries
- 2 tablespoons brandy
- 1/3 cup orange marmalade
- 3 ounces white chocolate chips
- 3 ounces cream cheese, softened
- 1 stick butter, softened
- 1 cup flour

Crustless Smoked Salmon Quiche with Dill

1. Combine first 5 ingredients in a large bowl, stirring with a whisk
- 1 1/4 cups fat-free evaporated milk
- 1/4 cup fat-free sour cream
- 1 tsp Dijon mustard
- 4 large egg whites
- 1 large egg
- 1/2 cup (2 ounces) shredded Gouda cheese
- 1/2 cup thinly sliced green onions
- 1/4 cup thinly sliced smoked salmon, chopped (about 2 ounces)
- 2 Tbs chopped fresh dill
- 1/2 tsp black pepper

Cheesecake bites are nothing more than little chocolate-covered morsels of creamy cheesecake
- For the crust
- 1 1/2 cups (225 g) gluten free cookie crumbs (I used my “Nabisco” GF Honey-Maid Grahams, from Classic Snacks)
- 5 tablespoons (70 g) unsalted butter, melted and cooled
- For the filling
- 2 8-ounce packages (total: 16 ounces) cream cheese, at room temperature
- 3/4 cup (150 g) granulated sugar (can reduce to 1/2 cup (100 g) for a less-sweet version)
- 1/8 teaspoon kosher salt
- 2 tablespoons (18 g) cornstarch (or try arrowroot)
- 2 eggs (100 g, weighed out of shell) at room temperature
- 1 teaspoon pure vanilla extract
- For the chocolate coating
- 8 ounces bittersweet chocolate, chopped
- 2 tablespoons (28 g) virgin coconut oil (or vegetable shortening)
