Shrimp and Goat Cheese Grits with Roasted Red Pepper Sauce from the Tupelo Honey Cafe cookbook by Elizabeth Sims an
- Ingredients:
- 2 2 1 1/2 plus 1 1/2 tsp EVOO
- 1 1 1 pound large uncooked shrimp, peeled, deveined and tails removed
- 1 1 1 Tbsp minced garlic
- 1/2 1/2 1/2 cup thinly sliced roasted red bell pepper
- 2 2 2 1/2 1 2 1 1 sugar, 2 1/2 tsp sea salt, 1 Tbsp smoked paprika, 2 tsp cayenne pepper, 1 tsp freshly ground black pepper, 1 tsp white pepper) **I left out the sugar and white pepper.
- 1/4 1/4 1/4 cup dry white wine (i.e. Sauvignon Blanc)
- 3 3 3 Tbsp unsalted cold butter

Grandma Luetta's Strawberry Jello Salad

- 1 large pkg of strawberry jello (sugar free) or 2 small boxes
- 2 cups boiling water
- 2-3 (1 1/2 C) mashed bananas
- 1/2 tsp lemon juice
- 1 16 oz pkg frozen strawberries, thawed.
- 1 8.5 oz can crushed pineapple in own juice, drained.
- 8 oz fat free sour cream
- 8 oz fat free cream cheese
- 1/2 cup chopped pecans

Heat a saucepan to medium-low, add the oil, then add the onions once the oil warms
- Soup:
- 2 teaspoons canola oil
- 1 large onion, chopped
- 2 cloves garlic, smashed and chopped
- 3 stalks celery, chopped
- 1 yellow bell pepper, chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 tablespoon all-purpose flour
- 5 Russet potatoes, peeled and diced
- 1 quart homemade or low sodium chicken or vegetable stock
- 1 bay leaf
- 1 ear corn cooked or 1/2 cup frozen kernels
- 1/4 teaspoon cayenne pepper
- Toppings:
- 8 cherry tomatoes, diced
- 2 Tablespoons plus 2 teaspoons reduced-fat sharp cheddar cheese, shredded
- 1 head green leaf lettuce, shredded

- 2cups (280 g) gluten free cake flour (80% (224 g) all purpose gluten free flour + 20% (56 g) cornstarch) (can substitute an equal amount of 100% all purpose gluten free flour)
- 3/4 teaspoon xanthan gum (omit if your blend already contains it)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin pie spice (plus more)*
- 1/2 teaspoon kosher salt
- 1 cup (200 g) sugar (plus more)
- 8 tablespoons (112 g) unsalted butter, at room temperature
- 2 eggs (120 g, out of shell) at room temperature, beaten
- 1/2 cup (120 g) sour cream, at room temperature (can substitute an equal amount of Greek-style plain yogurt)
