Chinese Chicken Salad, from Barefoot Contessa Parties!

Preheat the oven to 350 degrees F
- For the dressing:
- 4 split chicken breasts (bone-in, skin-on)
- Good olive oil
- Kosher salt
- Freshly ground black pepper
- 1/2 pound asparagus, ends removed, and cut in thirds diagonally
- 1 red bell pepper, cored and seeded
- 2 scallions (white and green parts), sliced diagonally
- 1 tablespoon white sesame seeds, toasted
- 1/2 cup vegetable oil
- 1/4 cup good apple cider vinegar
- 3 tablespoons soy sauce
- 1 1/2 tablespoons dark sesame oil
- 1/2 tablespoon honey
- 1 clove garlic, minced
- 1/2 teaspoon peeled, grated fresh ginger
- 1/2 tablespoon sesame seeds, toasted
- 1/4 cup smooth peanut butter
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper

Preheat oven to 325 degrees F
- 3 cups chopped yellow onions (2 large onions)
- 2 tablespoons good olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
- 1/3 cup Worcestershire sauce
- 3/4 cup chicken stock
- 1 1/2 teaspoons tomato paste
- 5 pounds ground turkey breast
- 1 1/2 cups plain dry bread crumbs
- 3 extra-large eggs, beaten
- 3/4 cup ketchup

- 3/4 cup confectioner's sugar
- 1 1/4 cups (6 1/2 oz) whole lightly toasted blanched almonds

- 1 cup King Arthur Unbleached All Purpose Flour
- 1/4 cup orange liqueur (such as Triple Sec) for brushing
- Ricotta Topping
- 1 cup ricotta cheese
- 1/2 cup confectioners' sugar
- 1 teaspoon vanilla
- Lemon and/or orange zest (my addition)
- pinch of salt
- 1 cup whipping cream, whipped and chilled
- 1 cup semisweet mini chocolate chips
- 1/2 cup finely chopped salted pistachios
Cranberry Pear Crisp

I've made Cranberry Pear Crisps before, because I think they're such a great combination
- TOPPING:
- 1 cup brown sugar
- 1 cup pecans, finely chopped
- 1/2 cup flour
- 3/4 sticks butter
- Note: Leftover crumble stores well in an air tight container for 2 weeks, maybe more!
- FRUIT FILLING:
- 2 pears, cored, peeled and cut into bite size slices
- 2 cups fresh cranberries
- 1/2 cup water
- Zest of 1 lemon
- 1 cup sugar, divided
- 2 teaspoons corn starch
- 2 pats cold butter, diced

- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt

- 2 sticks unsalted butter, at room temperature
- 2 eggs
- 1 teaspoon vanilla extract
- 12 ounces block dark chocolate, coarsely chopped
- 1 cup walnuts, chopped

- For the pastry cream (from Joy of Baking):
- 1-1/4 cups milk (whole or 2%)
- 1/2 vanilla bean, split lengthwise or 1 teaspoon pure vanilla extract or vanilla bean paste
- 3 large egg yolks
- 1/4 cup ( granulated white sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons cornstarch (corn flour)
- 1/2 tablespoon liqueur (Grand Marnier, Brandy, Kirsch or Amaretto) (optional)
- Brioche dough:
- 1/4 cup whole milk
- 1 tablespoon honey
- 1 1/2 teaspoons active dry yeast
- 2 large eggs, lightly beaten
- 3/4 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 cup plus 2 tablespoons bread flour, divided
- 1/2 cup unsalted butter, at room temperature
- Honey-Almond Topping:
- 1/4 cup (4 tablespoons) unsalted butter
- 1/4 cup sugar
- 1/4 cup honey
- pinch of salt
- 3/4 cup sliced almonds

- 16 ounces dried pinto beans
- 6 ancho chiles, stems and seeds removed
- 6 cloves garlic, minced
- 1 onion, diced
- 1 (15-ounce) can tomatoes (or 2 medium-sized tomatoes, peeled)
- 1 teaspoon brown sugar
- 1 teaspoon apple cider vinegar
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1 cup of water
- 6 cups beef broth
- Salt and black pepper, to taste
