- vegetable oil, for pan
- 10 cups water

- 1 large egg yolk, beaten with 1 tablespoon water for egg wash

- 1 17.6 oz. package gnocchi
- 3/4 cup light or whole milk
- 3 carrots
- 2 stalks celery
- 1 turnip
- 1 yellow onion
- 1 bunch thyme
- 3 Tbsp. flour
- 2 tbsp. butter
- 1 Tbsp Weeknight Hero Spice Blend (Garlic Powder, Onion Powder, Smoked Paprika, & Whole Dried Parsley)
- 1/3 cup chicken bone broth
Sweet Potato & Caramelized Onion Frittata

My son hates sweet potatoes
- OPTIONAL:
- 1 large yam, peeled and sliced 1/4-inch thick
- 1 small onion, thinly sliced
- 3 to 4 sprigs fresh thyme, removed from stem (or about 1 teaspoon dried)
- 1 tablespoon fresh sage, chopped (or about 1 teaspoon dried)
- Fresh Rosemary, but be easy. It can be a very potent herb.
- 8 fresh eggs
- 1/2 cup milk (I use 2% milk)
- Coarse salt & ground black pepper
- Olive oil
- 1 pat unsalted butter
- OPTIONAL:
- 1/2 cup parmesan, grated and/or 1 cup grated cheese of your choice*
- I like to use a 4-cheese blend of p\Parmesan, Asiago, Fontina and mild Provolone, purchased at Trader Joe's
- EQUIPMENT:
- Ovenproof skillet
White Christmas Cake

For the Vanilla Cake: Preheat oven to 350 degrees F
- For the Vanilla Cake:
- 5 large egg whites, at room temperature
- 3/4 cup whole milk, divided, at room temperature
- 2 1/2 teaspoons pure vanilla extract
- 2 1/2 cups cake flour, sifted then spooned & leveled
- 1 3/4 cups sugar
- 1 tablespoon PLUS 1 teaspoon baking powder
- 3/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature and cubed
- For the Whipped Vanilla Frosting:
- 1 1/2 cups (3 sticks) PLUS 2 tablespoons unsalted butter, softened but cool
- 3 1/2 cups powdered sugar, sifted
- 3 tablespoons milk
- 1 1/2 teaspoons pure vanilla extract
- pinch of salt
- white sanding sugar, for decoration

- 1/2 cup brewed espresso
- 1 1/2 cups granulated sugar
- 1/2 cup bourbon
- 4 large eggs
- 1 teaspoon pure vanilla extract
- 3/4 cup mini chocolate chips (I used mocha chips)
- 6 Tablespoons (3/4 stick) unsalted butter, cut into pieces
- 6 Tablespoons packed light brown sugar
- 2 teaspoons instant espresso powder
- 6 Tablespoons heavy cream
- 1 1/2 cups confectioner's sugar
- 2 Tablespoons bourbon
