Country French Omelet (Bacon & Potato Frittata)

This omelet a very simple breakfast/brunch recipe, which is really like a frittata
- 1 tablespoon good olive oil
- 3 slices thick-cut bacon, cut into 1-inch pieces
- 1 cup (1-inch-diced) unpeeled Yukon Gold potatoes
- Kosher salt and freshly ground black pepper, to taste
- 5 extra-large eggs
- 3 tablespoons milk
- 1 tablespoon unsalted butter
- 1 tablespoon fresh chives, chopped

- Chocolate Buttercream:
- Butter, for greasing the pans
- 1 3/4 cups all-purpose flour, plus more for pans
- 2 cups sugar
- 3/4 cups good cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup buttermilk, shaken
- 1/2 cup vegetable oil
- 2 extra-large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup freshly brewed hot coffee
- 6 ounces good semisweet chocolate (recommended: Callebaut)
- 1/2 pound (2-sticks) unsalted butter, at room temperature
- 1 extra-large egg yolk, at room temperature
- 1 teaspoon pure vanilla extract
- 1 1/4 cups sifted confectioners' sugar
- 1 tablespoon instant coffee powder

- CHICKEN:
- 2 quarts water
- 2 cups soy sauce
- 1 tablespoon vegetable oil
- 6 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 4 chicken, split halves* (about 8-pounds total)
- Split chicken halves are whole chickens that have been split in two through the breastbone.
- GLAZE:
- 3 (6-ounce) cans pineapple juice
- 1/4 cup light brown sugar, packed
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 4 garlic cloves, minced
- 2 tablespoons grated fresh ginger
- 2 teaspoons** chili-garlic sauce
- GRILLING:
- 2 cups wood chips (see related Key to Bold Flavor), soaked for 15 minutes
- Note: Chili-garlic sauce can be pretty spicy, so cut in half if you are sensitive to heat.

- 1 tablespoon olive oil
- 1/2 teaspoon salt
- Coarsely ground black pepper

Red Beans & Rice

I like to use my pressure cooker to make beans, but you can also use a stove pot for these
- 1 pound red beans, rinsed and sorted through
- 1 large onion, chopped
- 2 garlic cloves, minced
- 6 quarts water*
- 1 teaspoon sweet paprika
- 1/2 teaspoon cayenne
- 1 teaspoon seasoned salt (I used Lawry's)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon celery salt
- 2 Bay leaves
- 2 teaspoons tomato paste
- Optional: 1 to 2 cups chopped, cooked leftover ham
- NOTE: I like to use a combo of water and chicken stock. The amount of liquid should only cover the beans no more than 2 inches.

- 2 cups sharp cheddar cheese, shredded (I used 3 cups, total, reserving 1 cup)
- 1 cup mayonnaise
- 1 cup sour cream
- 5 to 6 green onions, sliced
- Salt and pepper to taste
