- 1/2 cup ketchup

- 2 tablespoons grated onion (see note)

- 2 tablespoons Dijon mustard
- 2 tablespoons cider vinegar
- 1 tablespoon light brown sugar
- Kebabs
- 2 pounds boneless, skinless chicken thighs or breasts, trimmed of excess fat and cut into 1-inch cubes (see note)
- 2 teaspoons kosher salt
- 2 tablespoons sweet paprika
- 4 teaspoons sugar
- 2 teaspoons smoked paprika
- 2 slices bacon , cut into 1/2-inch pieces
- 4 12-inch metal skewers
Lentil Soup with Sausage and Kale

Place a large soup pot over medium-high heat with one turn of the pan of EVOO, about 1 tablespoon
- 1 tablespoon Extra Virgin Olive Oil
- 1 pound bulk hot Italian sausage
- 1 cup lentils
- 1 medium onion, chopped
- 3 to 4 cloves of garlic, grated or chopped
- 1/2 pound cremini mushrooms, wiped clean and thinly sliced
- 1 baking potato, peeled and diced
- 2 sprigs rosemary, leaves removed and chopped
- 3 to 4 sprigs thyme, leaves removed
- Salt and ground black pepper
- 1/4 cup tomato paste
- 4 cups chicken stock
- 1 bunch kale, thick stems removed and discarded, leaves shredded
- Yields: 4 servings
Fior di Latte Panna Cotta

Panna Cotta is an Italian dessert that means "cooked cream"
- 4 cups heavy cream
- 1/2 cup sugar
- 4 teaspoons powdered gelatin
- 6 tablespoons cold water
- 2 teaspoons orange flower water*
- 1/8 tsp Pure orange Oil (optional)
- If you don't have orange flower water, you can substitute pure orange oil, vanilla... whatever flavor you like.
Sardianian Sausage Tomato Sauce & Ciccione (Gnocchi)

I watched Celebrity Chef Lidia Bastianich making this dinner on her PBS television cooking show, very recently
- For the sauce:
- Olive Oil
- 1 pound Italian, sausage
- 1 onion, finely chopped
- 2-3 garlic cloves, finely sliced
- 1/4 cup white wine
- 1 large can (32 oz.) peeled whole tomatoes (San Marzano is preferred, lightly crushed
- 1/4 tsp red pepper flakes (used 1/2 tsp.)
- salt (to taste)
- fresh basil (4-6 large leaves)
- For the Ciccione (dumplings):
- 4 cups semolina flour
- 1 1/2 cups water
- 1/2 cup hot water
- pinch saffron (or you could use tumeric, which is cheaper and will give the pasta the golden color
Pork Chops with Maple Mustard Glaze

- 4 (4-ounce) boneless pork loin chops, trimmed $
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup fat-free, less-sodium chicken broth
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 1 teaspoon chopped fresh sage
- 1 teaspoon chopped fresh thyme
- 2 teaspoons heavy cream
Chicken Fried Rice

Fried rice is best made with leftover rice that's at least a day old
- 3/4 pound boneless skinless chicken thighs
- 1 teaspoon salt, divided
- 3 tablespoons canola oil (or any high heat oil), divided
- 3 large eggs, whisked
- 2/3 cup yellow onions, diced
- 2 cloves garlic, minced
- 2 teaspoons minced ginger
- 1 large carrot, peeled and diced
- 2/3 cup frozen peas, rinsed under warm tap water for a few seconds thaw
- 4 cups cooked jasmine rice (preferably leftover from at least a day before, see Recipe Note)
- 2 scallions, sliced (separate the white and light green parts from the dark green part)
- 1/2 teaspoon Chinese five-spice powder (optional)
- 2 1/2 tablespoons soy sauce or tamari
- 1 teaspoon sesame oil
