Red Velvet Cake with White Chocolate Frosting

Buttermilk and vegetable oil makes this cake batter very moist and tender
- CAKE:
- 1 1/2 cups all-purpose flour
- 1 1/4 cups cake flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon table salt
- 1 teaspoon instant espresso powder
- 2 1/4 cups sugar
- 3 eggs
- 2 1/4 cups vegetable oil
- 1 2/3 cups buttermilk
- 1 ounce liquid red food color
- 1 teaspoon vanilla extract
- 1 tablespoon distilled white vinegar
- FROSTING:
- 2 cups whole milk
- 1 1/2 cups all-purpose flour
- 4 ounces quality white chocolate bar, chopped
- 2 cups granulated sugar
- 2 sticks unsalted butter, softened
- FROSTING GARNISH:

Roasted Butternut Squash & Apple Soup

I have never liked butternut squash, until I created this soup recipe
- 4-5 cups butternut squash, peeled and diced
- 2 small apples, peeled, cored and cut into chunks (Granny Smith is a firm sweet/tart apple works best)
- 1 small Yukon Gold potato, cut into chunks
- 1 cup leeks, sliced thin (or 1 yellow onion, diced fine)
- 2 cups chicken (or vegetable) stock
- 2 oz. dry white wine
- 1/2 cup apple cider (preferably unsweetened and natural)
- 4-5 fresh thyme sprigs (about 4-5" long)
- 2 bay leaves
- 1/8 tsp curry powder (optional)
- coarse salt & fresh cracked pepper
- good olive oil
Almond Bars

In a large bowl, cream the butter, almond paste and 2 cups sugar until light and fluffy
- 1 cup butter, softened
- 1 cup almond paste
- 2-1/4 cups sugar, divided
- 2 eggs
- 1 teaspoon almond extract

- 1/2 cup slivered almonds
Balsamic Seared Skirt Steak: (marinade adapted from Cooking Light)

- 1 lb. skirt steak
- 1/4 cup balsamic vinegar
- 1 tbsp Worcestershire sauce
- 2 tsp brown sugar

Rib-Eye, T-Bone and Strip Steak Cut Over 1-inch

- Four-six bone-in or boneless rib-eye, T-bone, and/or strip steaks cut over 1"
- Sea salt or kosher salt
- Freshly ground black pepper

- 1/4 cup olive oil
- 4 Tbsp unsalted butter
- 10 crushed garlic cloves
- 1/4 cup finely chopped savory herbs such as rosemary, thyme, marjoram, oregano, and/or sage
- Board Dressing:
- 6 Tbsp olive oil
- 2 Tbsp finely chopped fresh flat-leaf parsley
- Sea or kosher salt to taste

- 1/4 cup pecans, toasted and chopped fine

- 1/4 cup (1 3/4 ounces) granulated sugar

Planked Grilled Salmon with Tarragon Herbs

I've always wanted to try grilling fish on a cedar plank, and I finally got to do it
- 1 cedar plank (6 by 14 inches)
- 2 salmon fillets (1 1/2 pounds total)*
- Salt and freshly ground black pepper
- My plank was slightly smaller; just adjust the salmon to fit the size of the plank.
- 1/2 cup fresh chopped tarragon (Italian Parsley is a good substitute)
- 1/4 cup extra-virgin olive oil
- 1 lemon
- 2 Tbsp. finely chopped shallot (about 1/2 small)
- 1 small clove fresh garlic, minced
