Oatmeal Cookie Pancakes

If you omit the bananas in the recipe, these pancakes taste just like oatmeal cookies
- 1 cup old fashioned oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 2 ounces, 1/4 cup, chopped walnuts
- 3/4 cup sour cream
- 3/4 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 really ripe bananas, mashed up
- 3/4 cup raisins
- 1/2 stick butter, 1/4 cup, melted, plus additional for buttering skillet
- Maple syrup or honey, for drizzling
- NOTE: I omit the ripe banana and walnuts; the bananas can overwhelm the flavor of the oatmeal cookie.
Raspberry Buttermilk Cake

This cake (slightly adapted from Gourmet Magazine) is very simple to make
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 stick unsalted butter, softened
- 2/3 cup plus 1 1/2 tablespoons sugar, divided
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon finely grated lemon zest (optional, but highly recommended)
- 1 large egg
- 1/2 cup well-shaken buttermilk
- 1 cup fresh raspberries (about 5 oz)
Strawberry Jam, Perfected (using no pectin)

I am a total beginner in making my own fruit jams, but this recipe is easy and pretty foolproof
- 2 quarts fresh berries, 4 pints
- 6 cups of sugar
- 1 pat of butter
- NOTE: I get four pints of crushed strawberries out of 6 baskets of strawberries
Snickerdoodle Skillet Cookie

Preheat the oven to 375F and adjust the oven rack to upper middle position
- Cinnamon sugar:
- 12 Tbsp. unsalted butter (divided into 9 Tbsp and 3 Tbsp)
- 1 cup sugar
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 3/4 tsp salt
- 1 1/2 tsp. cream of tartar
- 1 tsp. baking soda
- 1 large egg and one egg yolk (you can freeze the leftover egg white for future use)
- 1 3/4 cups all purpose flour (I use King Arthur Flour unbleached flour)
- 1 Tbsp. cinnamon
- 4 Tbsp. granulated sugar
Easy Caramel Cake

- 1/2 cup buttermilk , room temperature
- 4 large eggs , room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 1/2 cups granulated sugar

- 3/4 teaspoon salt
- 16 tablespoons (2 sticks) unsalted butter , cut into 16 pieces and softened
- Frosting
- 12 tablespoons (1 1/2 sticks) unsalted butter , cut into 12 pieces and softened
- 2 cups packed dark brown sugar
- 1/2 teaspoon salt
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 2 1/2 cups Confectioners' sugar , sifted

- 4 cups hash browns (no need to thaw)
- 3 Italian sausages, casings removed
- 1 onion, minced
- 1/2 bell pepper, chopped

- 1/2 cup steel cut oats
- 1 3/4 cups water
- 1 tablespoon oil (I used vegetable)
- Dash of salt
- 2 tablespoons whole milk

- 1 firm-ripe banana, sliced 1/4 inch thick on the diagonal

- 2 cups old-fashioned oatmeal
- 1/4 cup what germ
- 1/2 cup honey
- 1/4 cup molasses
