- 1 large or 2 small leeks, about 1 pound
- 1 to 2 small spring garlic, optional
- 2 bay leaves
- 20 black peppercorns
- 4 sprigs fresh thyme
- 2 tablespoons butter
- 2 strips bacon, chopped
- 1/2 cup dry white wine
- 5 cups chicken stock
- 1 to 1 1/4 pounds russet potatoes, diced
- 1 1/2 teaspoons salt
- 3/4 teaspoon white pepper
- 1/2 to 3/4 cup creme fraiche or heavy cream
- 2 tablespoons snipped chives
Strawberry Balsamic Jam (using pectin)

Making homemade jam isn't as difficult as I once imagined
- 2 quarts fresh strawberries
- 1 package powdered pectin
- 1/4 cup balsamic vinegar, or use 1/4 cup lemon juice
- 7 cups of sugar
- 1 pat of butter
- NOTE: measure the quantity of strawberries, once you have hulled and mashed them.
Simple Refried Beans

- 1 (15-ounce) can pinto beans (do not rinse)

This recipe comes from my trusted friends at King Arthur Flour
- FILLING:
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 1/8 teaspoon freshly ground black pepper (optional)
- 3 large eggs, beaten
- 2 cups (or one 15-ounce can) pumpkin
- 1 1/4 cups light cream or evaporated milk
- CRUST:
- 1/2 batch Piecrust (I recommend the "Traditional American Pie Crust" recipe)
Sylvia Dooley's Flour Tortillas

- 2 cups King Arthur unbleached all-purpose flour
- 3/4 teaspoon salt
- 1/4 cup Crisco
- 3/4 cup water hotter than lukewarm, but not uncomfortably hot
Seared Scallops with Pea Puree

Add butter in a skillet over medium heat, add garlic and shallots and cook until soft
- 8 large, dry natural scallops
- 1 bag of frozen peas, 1 lb.
- 1 cup of water or broth
- 2/3 cup of half and half, or more if needed to loosen puree
- 2 shallots, minced
- 1 large garlic clove, crushed
- 2 tablespoons, unsalted butter
- olive oil for searing scallops
- zest of 1 lemon
Pioneer Woman's Creamy Rosemary Potatoes

Ree Drummond, also known as The Pioneer Woman, likes to serve this potato dish with her "perfect pot roast
- 4 tablespoons (1/2 stick) butter
- 1 cup half-and-half
- 1 cup heavy cream
- 5 or 6 medium russet potatoes, sliced thin
- 4 garlic cloves, finely chopped
- 1 medium onion, finely diced
- One 8-ounce package cream cheese, at room temperature
- 1/2 to 1 teaspoon salt, to taste
- Freshly ground black pepper to taste
- 2 tablespoons minced rosemary leaves
- 3 green onions, light green and medium green parts, thinly sliced
- 1 cup grated Parmesan cheese
- 3 tablespoons minced chives
German Pancakes

- Measurements are "approximate". You want the batter to be fairly thin, but not watery.
- 3 cups all-purpose flour
- 3 1/2 cups milk
- 2 eggs
- 1 teaspoon vanilla
- Unsalted butter (for the skillet)
Golden Eggnog Cupcakes

1) Preheat the oven to 325F
- 1 cup (24 tablespoons) unsalted butter, at room temperature
- 2 cups sugar
- teaspoon grated nutmeg
- 1 teaspoon salt; reduce to 1/4 teaspoon salt if you use salted butter
- 1 teaspoons eggnog flavor
- 4 large eggs
- cup dark rum or brandy, optional
- 3 cups King Arthur Unbleached All-Purpose Flour
- 2 teaspoons baking powder
- 1 cups heavy cream
