  • 1/2 cup dry white wine
  • 5 cups chicken stock
  • 1 to 1 1/4 pounds russet potatoes, diced

  • 1 package powdered pectin
  • 1/4 cup balsamic vinegar, or use 1/4 cup lemon juice

  • 1/2 cup granulated sugar
