Banana Orange Maple Compote
By Foodiewife
One morning, I didn't have enough Maple syrup for pancakes, so I combined orange juice, brown sugar and maple syrup with bananas to solve my dilemma. This is a delicious option to traditional pancake syrup. I especially like to make this for blueberry pancakes or my Oatmeal Cookie Pancake recipe.
Ingredients
- 3/4 cups orange juice
- 1/2 cup maple syrup
- 2 tablespoons brown sugar
- 1/4 cup unsalted butter
- 2 large bananas, sliced

Preparation
Step 1
In a stainless steel pot boil the orange juice for 15 minutes, to reduce.
Reduce the heat to medium and add the maple syrup and brown sugar. Stir until the sugar has dissolved.
Remove from the heat and whisk in the butter.
Cool slightly and add the sliced bananas. Keep warm but do not boil again.*
*Cook's Note: The butter will separate if the compote is boiled and result in a grainy texture.
